Do Deff Rollas circumvent any armor saves? It's STR10, but doesn't have an AP value; does it do anything in regards to double toughness or anything?

Yes, you get Armour Saves.
No, Instant Death does not affect Armour Saves in any way, shape or form.

The image of a termagaunt getting an armour save against a deffrolla is hilarious. Seems like it should have something though, considering it's mounted on the front of a giant ramshackle vehicle.

It is a crude ork device. It's Just a Bit of metal. It IS Strength 10, so it will wound 90% of things on a 2+. Makes up for it I suppose. Not to mention that causing D6 Wounds (Effectively) whenever it tank shocks is a bit OP. At least this way Things have a Chance of surviving

It's definitely a crude device but it seems like if you connect it should do something... And maybe make it more expensive to have the ability to penetrate infantry armour or something.

Huh? Does Sticking a Deffrolla to a turbo-boosting unit mean anything? I know that if you ram a skimmer, they can just get out of the way on a 3+, but turbo-boosting bikes?

I meant if you try and ram a vehicle that has turbo boosted that vehicle can just move out of the way, not putting a deffrolla on a skimmer. Basically, exactly what your 3rd sentence said... Sorry for the confusing wording. But let me tell you, I would love to see a deffrolla conversion on a wave serpent.
