So if a model is armed with a power sword and a bolt pistol, he'll get +1 attack for having two weapons. Now, is that extra attack a power weapon attack (ignoring armor saves) or is it just a regular CC attack from the pistol (counting as just a CC weapon, of course)?

Page 42 explains how the different combinations of close combat weapons work. All of a models attacks are made with the one weapon.
