Well as your avatar shows, using dark angels minis is a pretty good start. Covered in robes and markings and such. Total religious monk look already.
Id also take design cues from some of the SOB minis and Inquisition. The cool religious smokers and such on them are perfect for that. And you could always design your chapter mater to be shoulder carrying a cross

Well I'm not exactly sure what your looking for but I like the idea.
My suggestion would be to include lots of Knight like armour, robes, chains, and burning torches
How good are you with GS?
I think DA bodies, and BT heads with Greenstuff hoods would be good. Then any other BT bits you could throw in would be good. The upgrade kit comes with lots of bits to customise your tanks aswell.
If you do use BT and DA stuff I really suggest buying the parts from a bitz site otherwise you'll be paying for a lot of parts that you probably won't want to use. Plus you can buy extra heads, other wise its going to be very expensive to buy the whole kit to get the specific parts.
EDIT:
Stay away from bald unhelmeted heads, they would really ruin the whole atmospheres.

Thanks for you replies !
I looked at the SoB/Inquisition and that's the kind of things I'm looking for , braseros , books , skulls etc ...
I like the Black Templars but I don't really like their " knight & crusade " aspect , I mean I would like something with more skulls , scrolls , seals , bones and fire but I'm going to use some Black Templars parts/bits/minis and to convert them .
I really like this concepts artworks , especially Grimaldus :

http://s992.photobucket.com/albums/af42/Palimpseste/Warhammer%20Pix/?action=view¤t=0917btskizzen1ew7.gif
I plan to use this as HQ choice with some converted stuff :
http://www.games-workshop.com/gws/catalog/productDetail.jsp?catId=cat1400007&prodId=prod1050248
I prefer loin clothes rather than robes because I would like to do a lot of work on the chests .
And if somebody has chapter symbol ideas ^.^ ( no cross ) .
Thanks a lot !

Oh by the way Chapterhouse studios make some nice gothic shoulder pads. You should probably look on their site. Some of their stuff looks similar to the artwork, and they are a lot more interesting than plain shoulder pads.

Dark angels might be your thing. Or you can make your own chapter and really focus on your ideal marines. Sounds like you know what you want. Go make it! And good luck.

If you want to make a Witch Hunter army but want skulls, you can get premade skulls (among other things) here:
http://www.forgeworld.co.uk/acatalog/QUATERMASTERS_STORE_WITCH_HUNTERS_27.html
I think I'll end up ordering the pack of seals and icons myself at some point...

I can personally recomend Paper and Glue cloaks and hoods. Once you get the hang of it they are easy and very realistic.
Just cut tissue paper into the shape you need (make it about 3 of the thin sheets thick) paint it with a mix of water and glue and, put it on the model. If its not strong enough when it is dry soak a small amount of superglue into it.

If you were after a bunch of small bits n pieces (chains, books etc) see if you cant find some spare Warhammer Flagellants sprus.
Ive got a couple floating around and i know that they have stacks of chains as well as torches, books and skulls/bones.
Good luck with your army mate. Always good to see something other then the same old marine chapters.

To me this sounds like legion of the damned but i'm not totally sure if thats what you meant by gothic.
Of course the legion of the damned are an elite choice.
I think that if you were modeling around them it would look pretty sweet though.

You should put some huge epic gothic arches on your tanks and make your buttresses fly
i really like the idea though...
they should have white armor with dark red trim and black touches
(may i suggest the bolter and chainsword space marine painter http://www.bolterandchainsword.com/smp.php)

If you want some veterans, GW is releasing some new models for the Legion of the Damned which, painted in your colourscheme would make awesome Sternguard, Veterans or other stand-out mini's. They are full of skulls and fire with a really gothic look. Check the official GW site and there's a link on there.
Otherwise, you have a solid idea there and I like the colours chosen. They'll look mint when they're done!
On topic of bitz and what-not, if you can find some Warhammer Empire bits they'll go with the image quite well!
Look forward to seeing how things progress, best of luck!

I think it would be quite interesting to see shoulder cathedrals on SM's as well as the big Titans
Or each back pack containing a shrine as well as the regular power/enviro gubbins.
I can also suggest using the Warriors of Choas sprus for bits and pieces. I use some of the horse knight arms with lances for my CSM terminators... they look fantasticly good and the big shoulder guards are great.
