So, I've made a special unit for a mission, it's got toughness 0, it can't be IK can it?
Effectively, it's impossible to make 'double it's score' since 0*2=0.
How to solve?

You've answered your own question.
Any model is subject to instant death if the strength of the attack is equal to or greater than double the toughness.
Ergo, if a model has a toughness of 0, then 2x0=0, hence any attack with a strength of 0 or greater will cause instant death.
I think you will find that most attacks in 40k meet this criteria.....

Yes it can be instant deathed but it can't actually be wounded. Chimera_Calvin is the correct EVERY weapon would ID it because they all have strength equal to or greater than 0. However none could wound it as there is no wound result on the table for T0...

He's not doing too well, but he's well hidden (i.e, he's in N- TLOS cover)

You would need to make him at least a T1 as the charts do not even account for T0 models. To answer you question though, double your toughness or higher would indeed be Instant Death (ID).

If your worried about him being ID'd you can throw him EW. Its house rules anyways, you have to make up your own minds ;P

What would possibly be the problem with something causing ID on a model with T0?
Starting the first movement phase should cause it ID.
