I can't find anything on this supposed "Documented Case"(unless you're referring to the 5 year old who had a large buildup from gas from the Shrek themed ice cream with pop rocks in it, which is the ONLY documented ER visit caused by Pop Rocks*). Do you have a link for info on it?

All evidence regarding them interacting proves that legend to be false.

Of course while it might indeed take seven year to digest a piece of gum, the fact that it will only be in your body, on average, 22 hours before you shoot it out the other end renders that fact pretty much irrelevant.

"Out of sheer curiosity, we will take this piece of ABC gum and submerge it in gently agitated hydrochloric acid for a couple of weeks, and see how much of it's mass has been dissolved in that time. From there, we will extrapolate how long it would take to dissolve completely."
