What do you use to protect a painted model?
And is it available in GW stores?
If not where can you get those

For standard infantry stuff, 2 thin layers of Humbrol matt varnish. For tanks and models that get a serious weathering treatment, up to 10 layers of varnish in some areas, to seal decals, oil paint and pigments.

What sealant do you use to cover Decals withoutt making them shrivel up? Also, how do you stop them being shiney when the light catches them?

I spray my models with Testors gloss varnish. This protects them really well, but leaves them shiny. Then I use Army Painter matte varnish to take the shine away. They look great, and can be handled all day long.

I use hardware store brand matte spray. I've never tested it on decals and it doesn't leave the minis as flat as dul-cote, but it does take away most of the shine and leaves a nice sturdy finish that is just a bit shinier than flat.
Did I mention it's cheap?

Another thing is even if the model ends up being too flat after the matte varnish (particularly the metallic colors), you can touch them up a bit afterwards by reappling a few of the highlights and it brings the models back to life and the overall paintjob is still well protected.

I like decals first (applied with decal-cote to stop them fogging) then Plastikote gloss sealer and finally Vallejo Matt spray varnish.

I've rarely varnished my models, as so many varnishes either alter the colour or kill the highlights.
My original Marine army (painted with GW paints and undercoated with Chaos Black straight out of the pot) has been in fairly frequent use since 1994, and has never needed touching up.
To be fair, though, I can' say if the current range of GW paints is as hard-wearing as the old ones were...

I cover the whole model with Humbrol Gloss. If it's a metal or resin model, I give it a second coat. Then, I use Matt and Satin varnish on areas I don't want to be shiny. I have all three textures on most of my models, especially Tyranids.

i tend to stick with Purity Seal. it works fine most of the time but can make decals go cloudy.
TBH i dont usually bother sealign platic modesla s the paint is pretty ard wearing, but for reason metal models wear down a lot faster. these ALWAYS get a coat of varnish.
