This is an interesting post for me.
I am the IG player.

My Orky buddy and I played a set of 3 games, and I pretty much tabled him in all 3. It was an obvious victor at the end of each game.

It's a perfectly simple option for me to take a 'softer' list, but I figured Dakka could help out with some ideas for making the Orks more deadly vs. the guard.

Here's a list of roughly what I would like to take in game:

HQ:
CCS, Powerfist, Melta, Regimental Standard
CCS, Powerfist, Melta

Elites:
Psyker Battle Squad, Chimera w/ H.stubber

Troops:
Infantry Platoon:
-PCS, 4 Flamers, Bolt Pistol
-Squad, GL/AC, Vox
-Squad, GL/AC
-Squad, GL/AC
-Autocannon Support Squad.

Infantry Platoon:
-PCS, 4 Flamers, Bolt Pistol
-Squad, Melta, Vox
-Squad, Melta
-Squad, Melta
-Squad, Melta

Heavy Support:
1 Leman Russ Demolisher, with H.bolters.
Medusa w/ Breachers
Manticore

Not quite mech vets, but not simple for the Ork player either.

He's got a good number of the Ork models at his disposal, and we could always proxy if there's something he doesn't have.
Any help from the Ork players out there? Tips, Tricks, anything?

I'd stick with my good ol' fashioned speed freeks, myself. Fast as a greased cheetah, which means less turns of shooting for you. Make sure to have at least one Kustom Force Field in the army, so as to protect the transports from incoming ordnance/melta shots, and it should work a treat.

Yeah, I'm not sure what point value that is, but mech up with Ghazghkul Thraka, A Big Mech with a KFF, 2-3 BW with Deff Rollas and a Trukk or two all with boarding planks. Two Deff Koptas with buzzsaws and TL Rokkits, one squad of Lootas, One Squad of Burnas, and 14 Kommandos with Snikrot and 2xburnas.

If the Ork player gets first turn, use the scout move to turbo boost the deff koptas into a position to move, shoot, and assault the Medusa and Manticore. If the IG gets first turn, he can gamble for a initiative seize or place them in reserve to outflank.

One BW has the Burnas in it, driving up to those big IG blobs and hanging a template over the side, multiplying by 15, is going to cause them to rapidly shrink.

The Lootas focus on popping the PBS Chimera and any other AV12 armor, then just start pouring fire where needed.

Snikrot's Kommandos can enter from any edge, allowing him to target artillery pieces or hit a blob with burnas and then assault to tie them up.

Keep the AV14 BW fronts towards the IG, hope you make the KFF cover saves when you need them, Deff Rolla the Leman Russ, and turn 2 use your Waaagh! for the 27" assault and hit the IG with a wave of Orks.

Basically with the number of flamers you have, the Ork player has to be meched up and hope his vehicles survive long enough for him to dictate the Assaults.

So how to beat a fairly soft IG list?
Battlewagons with KFF mech: Take 3, fill up with slugga boyz and a klaw, and roll at top speed towards the IG lines. Autocannons bounce off, and by the time he is in melta range, its too late. He could use deffrollas, but with all those meltagun squads . . . I'm not sure if it's worth trying.

Deffkoptas and Kommandos.

Ghazghkull and KFF and battlewagons are a good central piece of a take all comers list, but if I was playing against IG specifically, and asked to tailor a list against a mech IG list.....it would be Snikrot, multiple units of deffkoptas....

And depending on points, maybe Lootas. Random HQ and two cheap troop choices.

If the orks go first, there's a huge turn1 assault capability, and if they go second, reserve everything and outflank/ambush everything that can.
