I was in on those discussions of transported Eldar CC units on the side that it couldn't be done, and I still agree that it won't work on a serpent that doesn't have a holofield.
But I routinely assault out of falcons with storm guardians and seer councils. There's always a sweet spot where a falcon can park with its nose 1" from a juicy assault target, but return fire is minimal and bounces off the holofield. Once the falcon is in that spot, infantry units and walkers can't move far enough to get away. Vehicles can get away by moving 12, but then they can't shoot so you've still accomplished something (often forcing them to expose side armor in the process).
The only reason I don't assault with scorpions or banshees out of falcons is that 6 is too small a squad to be really effective in most circumstances. If wave serpents get holofields, they'll be tough enough to withstand the turn of fire before the assault.
