If you want to have a self-sufficient first class for PvE?
Do a Hunter or a Druid. Both can, with Leatherworking, make some of the better gear for themselves and have a fairly forgiving learning curve.
Warriors have a decent learning curve, but there's also the fact that once you hit 80, you'll want to have a tanking set and a dps set, and most guilds won't even consider you for a casual spot unless you know how to fill either role adequately.
Shaman have a slightly higher learning curve, as do Paladins and the cloth casters(mostly just because of the fact that, as you're levelling you'll find some situations that are obnoxious to deal with).
Deathknights have arguably the least learning curve involved, to date. Most of what they are is best summed up as a Rogue/Warlock/Warrior mix wearing Plate. It requires you to have a level 55 character, or higher, and you can create it as any race/faction. They're also arguably the ultimate PvP class at the moment, even in the hands of a relatively unskilled player, because of their defensive cooldowns and baseline tanking abilities.
Rogues have a decent learning curve, also...but constantly are getting changes put in because of PvP. The devs currently are completely clueless as to how to fix them in PvE, without making them demi-gods in PvP.
