I'm having the same problem. When you start putting over 40 bikes on the table, they begin to take a lot of tablespace. One of the advantages of a fast army is that they can deliver the necessary firepower in a precise location when required. In essence, you are putting your 1750 army vs. half his 1750 army, and should look like this.
If you throw another 20 or so bikes on the table, its hard to focus your army on one area, which lowers a lot of the value of being a fast army, the opponet does not have to go as far to get to your units.
Once you start to push beyond 1750, Vulcan + TH/ SS Terminators in a LR starts to look like a good option as its a great counter assault, and can concentrate your power/points in a smaller area than covering the board.
That's what I figured, and why I was going to keep the number of bikes in the low/middle area. My real problem is that the rest of my list looks really muddy because I can't really find a good complement to their fast, shooty action.

Agreed, good with pics. I'd call it congestion.
So that's what we need:
Cover Fire.
Counter Attack.
Solid Second Wave.
Other troops types.
Things that can work with bikers or independantly.
I don't have access to 'all' of the internet at work...but I have a tactica (Ie my thoughts on biker lists) I'll link when I get home from 40KOnline.
In addition, there is a great discussion about The Way of the Water Warrior over at Bolter and Chainsword, good stuff.
My 7 Cents.
Edit: I found the linky:

This is a little story about four people named Everybody, Somebody, Anybody, and Nobody.
There was an important job to be done and Everybody was sure that Somebody would do it.
Anybody could have done it, but Nobody did it.
Somebody got angry about that because it was Everybody's job.
Everybody thought that Anybody could do it, but Nobody realized that Everybody wouldn't do it.
It ended up that Everybody blamed Somebody when Nobody did what Anybody could have done.

I prefer
6 man w/ 2 meltas , Powerfist as my standard bike unit ; putting my multimeltas on Landspeeders for fast attack.

No one's mentioned Ravenwing - is it inferior to a generic marine bike list?

Is it worth adding in vulcan at higher points when you lose combat tactics?
How important is combat tactics to a biker army?

For my style of play combat tactics is critical to a biker army at lower point levels. You need to be able to flee from an assault or flee to avoid one.
Oh, and ravenwing is inferior

I wouldn't say Ravenwing is inferior.
It's different and it operates differently (as in Doublewing).

Vulkan in higher games maybe.
Combat tactics is great for bikers, but at higher games, the opponents have more resources, the board essentially gets smaller, and with less room, combat tactics starts to wane in effectiveness.
So if you can't run, you'll want to augment how much you kill, which Vulkan can do.
Now you don't 'HAVE' to go with Vulkan, but there is a bonus to having him as the biker list loads up on the weapons he twin-links.
My 7 Cents.

The key thing about ravenwing is that it makes ALL your bikes scouts, which can be really handy.
They are also fearless IIRC, which can be a real boon. Nothing sucks more than having 2 bikes shot down in your combat squad, followed by a roll of a 11 on the 2d6 for leadership. That 3d6 fallback can easily bring em right of the board if they are to close.
Edit : Correction : lots of things suck more. Losing a winning lottery ticket. Major car repairs, etc... Still, it kinda sucks when your ATSKNF models vroom right off the table edge.
