Usually leftovers, nachos, an Omelet, or some frozen chimichangas (nuked of course). If I don't have enough time to cook then I am probably eating out.
I really do prefer to cook, but sometimes life gets in the way.

I'm the cook in my house. I'll eat most things - except thai or indian (I'm sensitive to a bunch of the herbs/spices they use in both).
Tonight we had a stew involving leftover lamb roast, potato, onion, garlic, corn and carrots. This is when I'm too lazy to actually cook anything (mixing leftovers and simmering is not cooking).
In the past I've grilled swordfish (note to the Americans - this is what you call 'the broiler'), pan fried venison with a port reduction, seared kangaroo fillet and served over sliced potato with a mustard cream sauce.
Then you have the more mundane stuff.
Roast herbivore.
Fried herbivore
Raw aquatic life.
