No they don't. Vehicles aren't scuttled in the same way losing a sweeping advance doesn't mean that they're all horribly butchered. In both cases, the phrasing is that they are no longer combat viable, not that they are utterly destroyed.

In the case of vehicles quads, this represents the crew abandoning their vehicle, or getting out and trying to enact battlefield repairs, or a host of other things that doesnt' blow the vehicle into tiny pieces - it just makes them irrelevant for the remainder of the game.

Plus, if they blew up their tanks, then the rules would make immobilized counts as "vehicles explodes!" rather than "vehicle destroyed".
