Why is dual hydra unrealistic? Monetary issues, or do you think they're cheese? I run dual hydras at 2250+ pts, and don' find it too cheesy as most people at this range have easy ways of dealing with them.
1x sorceress- level 2, tome of furion- 150pts
Close, but at the very minimum, she needs to be lvl 4. In this list she'll have to be your general, since the master is your BSB. Do you really want your army to have LD8? That's OnG territory.
1x master- shield, heavy armour, sea dragon cloak, battle standard, pendant of khaeleth- 150pts
Very solid, only thing I would suggest is adding either a halberd, or beastmaster's scourge, but not bad as is.
20x corsairs- command, sea serpent standard- 250pts
20x corsairs- command- 225pts
Both good, though I'd really consider dropping the second one, as it'll free up enough points to iron out the rest of the list.
30x spearmen- command, banner of murder- 250pts
20x crossbowmen- standard, musician, shields- 235pts
20x crossbowmen- standard, musician, shields- 235pts
No arguments here, solid choices.
5x dark riders- repeater crossbows- 110pts
Again, good pick
10x cold one knights- command- 310pts
Too many points for the roll you want them to fill. Being immune to psychology (from stupidity) means you can't bait and flee with them (and why would you want to?) I would cut them down to 5 + champion. Gives more points to spend else where.
5x shades- two hand weapons- 85pts
Very good unit, you'll always be able to find a use for them.

I made some more comments in red. The point of having a Lord level, is the
LD boost, so I would definitely find a way to get one. Here's a list I'd make based off what you have
1x supreme sorceress- level 4, talisman of preservation, darkstar cloak- 330pts
1x master- shield, blood armour, sea dragon cloak, battle standard, pendant of khaeleth, beastmaster's scourge- 167pts
24x corsairs- standard, musician, sea serpent standard- 280pts
30x spearmen- command, banner of murder- 250pts
20x crossbowmen- standard, musician, shields- 235pts
20x crossbowmen- standard, musician, shields- 235pts
5x dark riders- repeater crossbows- 110pts
5x cold one knights- dread knight- 151pts
5x shades- two hand weapons- 85pts
assassin - manbane, rending stars, extra hand weapon (joins the shades) - 151

There's 6 points to play with. This allows you to take an assassin, have a unit/role for him to fill where he shouldn't die very fast. By dropping the second corsair block and trimming the CoK, it allows you to get a much better caster, a higher
LD general, and the blood armor for the
BSB is optional, though if he's with your spearmen, if he gets into combat he'll be wounding stuff, getting him to a 1+ save with a reverse ward save is just awesome.
Also, now you can run your corsairs 6x3 instead of 5x4. The increased frontage will net you an extra 4 attacks in combat, which, with the appropriate buffs, can be 4 more wounds.
The CoKs are now at a points level to where, if they end up failing stupidity at a higher rate (like mine tend to) you won't be having so many points sit there. And likewise, if you face armies that can obliterate them turn 1, you're not losing so many points in 1 shot.
Anyway, just my suggestions.
