Where exactly are the rules that let you choose which Weapons you are equipped with you use?

I will save you the time looking: There aren't any, Barring the rules for 2 different special weapons.

This is my Rulebook. There are many Like it, but this one is mine. Without me, my rulebook is useless. Without my rulebook, I am useless.

To give the OP a "how it's generally played in my experience answer:" the BT codex is pretty vague as to whether you can select two additional weapons, or only have two weapons. The reason for this is that there was simply a sort of unwritten rule in 3rd & 4th editions that models could only have two weapons. One remnant of that is in the DA FAQ, which I think specifically jokes about their ability to take three weapons. So from a "would it be legal to bring three weapons" standpoint, most TOs are going to say no.

and where exactly are the rules for having more than two CCW's?

However under 'Two different special weapons' p.42 says "... they never get the bonus attack for using two weapons..."

you have to be using 'Two different special weapons' for these rules to have any effect, if you are not using 'Two different special weapons'

then you have to look at what weapons you are using, and use the rules for that set.

I would imagine that the same rationale that applies to two special weapons (the model gains no attack due to complexity) would also apply to two specials and a normal.

complexity only applies if you are using 'Two different special weapons'

If you use 1 special and 1 normal and have a special weapon hanging at your side, you use the rule set governing 'a normal and a special weapon'.

It matters what you use, and not what you are equipped with.

I think the language about choosing one to use, which implies that the model with three weapons could choose freely among those three, would apply just as readily to the selecting of weapons to "hold" as it does to selecting the weapon to "swing."

This applies to what, like three models in the game? If I were a TO, and somebody spent the points to actually build some ridiculous character with all those weapons, I'd probably allow the full attacks, just because you're paying a decent price for that flexibility.

the rules aren't clear, but it's hard to see how three weapons makes it less complex. If holding a lightning claw makes it too difficult to really parry with a power weapon, than by the same token I think putting the lighting claw away and drawing a bolt pistol would probably be equally difficult.
