CSM Daemon princes don't have the Daemon rule, oddly enough. They don't even Deepstrike from the warp, but need to glide down on wings to do it. If you go with RAW, a DP is doable as long as you don't make him a psyker. Then many of the GK nastiness goes into effect again.

In Boxing matches, you actually get paid to take a dive and make the other guy look good.
In Warhammer 40K, you're expected to pay cash out of your pocket for the privilege of having Marines and IG trample all over your Xenos/Chaos. |

They strike at S5 if they even get to strike. Halberds can do nasty things to Khorne Berzerkers even if they charge. Although I guess that Khârn would chomp face, what with I7 and all... Nooope, he can be Insta-killed by a battle cannon but not by a force weapon. Look at his rules, force weapons only have him loose one wound.
Which is why I specifically mentioned hammers. You can be blessed by the Blood God all you want, an S8+ hammer to the face WILL ID him.

There's nothing to stop skulltaker chopping of a Dreadknights head on a 4+... I'd run 60+ Bloodletters with some icons, 20 Plaguebearers as shields and Skulltaker to chop stuff in a 1500 point game. GW kept all the good rules for anti-daemons, added some more then got rid of the penalty. Doesn't seem very kind of them :(

Didn't you get the memo? Grey Knights really care about killing Daemons, so that allows for multiple rules and extra goodies for doing so (in case you wanna make sure). Just like Chaos Marines have regular SM as favored enemies, knowing them so well from their past strife and...oh...wait.
From what I've seen, the counter against GK for daemons is pretty much numbers, numbers and more numbers against everything that isn't purifiers, and Tzeentch shooting against the pure boys. But if they pick transports, I haven't yet figured out a way. :(

I think it is kinda  ed that out of all the armies in 40k, there is one that is made from the ground up to be a counter to another specific army.

Blessing of the Blood God. That is all. (Unless they have a rule that stops said upgrade I can foresee 'hunters resuming there original position of being good at Anti Armor or Anti Daemon with no middle ground and the lack of 'melta' is disturbing)

there is. Look up Dark Excommunicatum (sp?)
it negates chaos gifts... and C:CD lacks wargear, it's all gifts.
