I don't know if I'm taking this the wrong way or not, so if I am correct me.
It kind of seems like you are being selfish. If you see a new game pop up that you think is interesting, you join it, not ask the GM to delay it until your other priorities die down. There are other players than you (and the "regulars") willing to play the game (and really can't wait to start some interesting story). The game should only be paused by the GM because there are not enough players, or the GM has some problems and can't commit to starting the game yet - not because "regulars" think there are too many games going/want to join them all in due time/want everybody to have better quality games etc.
You seem to be the only person I regularly see posting in new games saying "There are so many other ones going on..." - but those very games blossom into nice stories where everyone has a great time... so I'd just say give it a rest.
Sorry if my tone got a little excited somewhere in there, it is by no means my intention to offend or insult anyone.
Ok Kais, well, I really only have one things to say.
With a nearly in-exhaustible source of people on dakka, I doubt the number of players will ever be a problem. Since so many new games have been starting up, I've actually seen a dramatic increase in RPers.
Everybody may not be able to get into all the games they want, but that's life. I can't do every sport at the same time, but I won't stop other people from joining those sports (or starting them).
Howabout a compromise? We should have 1 thread where everbody interested in an RPG will post something to this effect:
Midevil chain-fiction Fantasy multi-choice
or simply a more general proclamation: I am interested in chain-fiction
And then a tally will be kept for the number of players interested in that genre and mode of game... once a GM-to-be sees large numbers in one of those areas, he can see when it is an opportune time to start a new game... rather than starting a game nobody is interested.

I myself am graced with nearly limitless free time, and am able to play in as many RPs as I like. However, I tend to run into problems when I run several RPs at once.

My exact statement concerning multiple RPs was not so much directed towards the creation of multiple RPs, but rather towards players who join in on multiple RP's .
I've found that many times an individule will simply attempt to join every RP that catches their eye, and inevitably be unable to contribute to the several RPs they've joined.
Now, while there are those who can juggle seven RPs at once, I find it better for an RP as a whole if a player sticks to one or two RP's rather then stretching themselves thin.

Survivor games had their 5+ pages, then I joined and roleplay's started springing up left, right, front and centre.
I pride myself on the fact that I'm largely responsible for the massive increase of roleplays over the last year or so.

I, like yourself, have been pretty involved in running my RP series....but as always am only a PM away.
As for Mods dedicated to the SG&CF forum...never really gave the matter very much consideration.

As a shameless GM of several RP's i find myself appreciating the level of free time i have, im sure youve all seen me posting my trademark long posts in places such as Stalemate RP or 40000rpg the battle of Fenris
and on top of that i find i always have plenty of time to post to all the RP's i gm and rp in
ontop of THAT
i find that if people dont have the time to post, then its really quite simple, they dont, and for the like of people who post lots of short posts, well thats up to the discretion of the GM, i really couldnt care less
infact sometimes i appreciate it as a GM as i can have more impact on the story.
