Thats a big difference. Trying to get cover for a M/C is almost impossible.
Just to clarify that a little... Units most certainly do give cover. If LOS passes between models in a unit, the target gets a cover save.
For Monstrous Creatures and Vehicles, you are correct, though. The model has to be physically obscured by other models. LOS passing through the unit won't in itself cut it in that specific situation.
'Almost impossible' is a stretch, though. It's really not that hard with clustered infantry.

Or, you know, if you have proper terrain on the table. If the table has anything approaching sufficient terrain it shouldn't be hard to get MCs cover saves or hide them completely in at least a few places.

Heck, most of the time I want my Trygon out in the open, if my enemy focuses on that I can bring in my large group of gaunts around to assault with minimal shooting casualties.

Yup, that was 4th edition. It used TLOS, just like every other edition has.
Models were assigned size categories, but these only became relevant when the LOS passed through area terrain or close combats.
And the area of the base has never had anything to do with LOS. It's purely used for measurement.
What about P. 6. " A model is considered to occupy the area of it's base"?

Now read the rest of that rule to find out what it actually means in game terms. It has nothing to do with LOS.
There's really not a lot of point in hashing this out here, though. If you dig back through YMDC, you should be able to find some of the various assorted discussions on the topic from last edition... it was one of the most frequently misunderstood (and thus most discussed) parts of the game last edition, so shouldn't be too hard to find.

It's a BEAUTIFUL model the way it is now, but even in buildings its tough to get cover

I play Nids as my main army.
Warrior size models will give a carnifex or tervigon a cover save if there are enough of them close enough together.
An MC can give other MCs a cover save. So that tervigon in cover from Hive Guard can give cover to a hive tyrant. Now trygons, it may be possible to get a cover save from a hive tyrant but only for dead-on shooting.
Other interesting cover saves are for hive tyrants in that with tyrant guard attached (which are not MCs) if you can get these into cover then the Hive Tyrant gets a cover save as well. How to give them cover? Well, just a wall of gants will often do the trick (remember they're not MCs).
Also, zoanthropes are quite tall and so 3 in a brood properly spaced can give all MCs bar the trygon a cover save.
When using hive guard/warriors to give a cover save to a tervigon then they themselves can get cover from gants/stealers as again they are not MCs. So if you layer your army as follows:
gants/stealers/hive guard/tervigon/tyrant and guard/trygon - then everything bar the gants and maybe the trygon for side shots gets a cover save.
Depending on what is/isn't in cover will then often determine who gets FNP from the tervigons.

you could model a trygon to be walking on its talons and have the tail waving behind it, it'd be a little easier to find cover for it...
