My other main issue is space, I live with my mum (and around september I'll be moving into cramped university accommodation) so I don't really have much room for exercise equipment beyond a few weights.
Well since youll be a collage man then, you can just do squats and bench presses with your collage girlfriend.

In high school when I was involved with sports I had to do a lot of lifting, it was rather fun unlike running in circles until the point you have to apply some Vaseline to your crotch.
No matter how much I tried and pushed myself I could not get past a certain weight. Was never able to get big looking pythons or a 6 pack. It wasn't something I was looking for, just something I noticed I could never get not matter how much time I put in both during the season and off-season. Guess if I wanted them that bad I would have hired a personal trainer.
I only do mild weight lifting now just to help keep in shape. Most of my exercise is Cardio.

I have the opposite. I can't really lift that much but my muscles are pretty big.

For wrestling our workout is a full range of activities- cardio, flexibility, and strength. Doing that workout I lost about 10 pounds in the first month last year and my overall fitness continues to improve.

I do kinesiology and exercise physiology with biology.
First of all why do you want to lift these numbers? Is there a purpose?
Secondly, your deadlift should be your strongest lift, so the fact that you are maxing at the same as your squat either means that A: you are doing it with poor form, or B: you should move it up in your order of exercises so you are not fatigued by the time you do it.
Next, once you start lifting heavy, which you are, you arent supposed to make gains constantly, your body doesnt work like that. There are limits on what you can achieve with your current musculature and neurological pathway functioning that take months to develop despite what you may read about. Also if you are natural it is very hard to lift 500lbs in any exercise. You arent short and so you have longer moment arms which makes things harder, you may also have a small bone structure, etc. All these things matter.
Anyway basically the answer is: change your program, take time off if you are over training (again if you are natural 3x a week of lifting super heavy is counter-productive), and just give it time.

I'm not maxing the same weight on deadlift and squat. My max squat is 315, I can deadlift 315 5 times. I don't know my current deadlift max because I haven't tested it. I would guess 360-375.
