I agree with your first point - I always split Daemons based on how they need to deploy and what threat they offer. That means bunching up assault units and shooting units so no matter what wave you do get, you can deploy consistently. For example, I usually throw all my troops in Wave 2 - that way if I get it I can Deep Strike back near my deployment zone and hide until the heavy hitters come.
Opponents need to be careful of even advancing to hit these troops, because a full set of assault units are sitting in reserve and if they elongate their position (leave some in back to camp objectives and move others up to deal with the troops) I am going to drop in behind them and roll up their army from their deployment zone and they just will not have the concentrated firepower to weaken those elements. This also tends to pin their army in place and makes it hard for opponents to make it all the way across the board in time.
I actually just played a Tyranid list at Da Boyz (2x Tervis, 2x Dakka Fex, 2x Dakka Flyrant, 3x, 2x Hive Guard) and deployed back as you described with my units and left the Flamers in reserve to drop in later - with all the little bugs around it is really tough to make flamers work against their high priority targets.
Not to hijack this thread - I could write pages about the Tyranid Daemon matchup - it is a really tough game as Daemons.
