I'm surprised Lootas hit 11 times, let alone penetrated that many.

That seems way outside the probabilities. 9 Lootas = average 18 shots = 6 Hits = 2 Glances/Pens. Of course, I'm assuming your typical "can go to ground" number of Lootas. Also, you can't actually attack Void Shield Generators.
BRB: "You cannot attack an unoccupied building (with Shooting or in close combat)".

If it's voids then he's using stronghold assault. So you can shoot/assault "claimed" buildings.

45 shots = average 15 hits = average 5 glance/pen

True, assuming he never touched the battlements. The screwy thing though is that is part of the Sentry Defense System rule. Why would a VSG have one? Well, it does now.

You can't claim a claimed building by going on the battlements, you have to embark (which you can't).
You can claim an unclaimed building by going on the battlements, but there's no way this would be unclaimed.

Ah, you are right. I read that bit wrong. Read that as an unoccupied or unclaimed, not "and".

Aren't they just d3 shots?

He might mean 5 on a D3 meaning 3 shots each (using a D6 for a D3)

Apart from using the Behemoth rule only found in Escalation/ Apoc, are they really escalation units as such?
I'm guessing this is a "wait for Codex" question, but if they were Lords of War they would be limited to 1 and would not be playable as an army of 6?
They seem more like Riptides/Wraithknights, "standard" heavy support, if there were such a thing?

escalation = standard 40k
Knights are not Lords of War, which is a concept introduced in escalation, but escalation is not a optional supplement, they are part of the core rules and will most likely be included in the main rulebook to make this point even more so this upcoming summer when the next edition of 40k comes out.
They do not have the lord of war special rule, so you are not limited to just 1.
This is somewhat unfortunate as showing up with a knight army is pretty imbalance against some Take all Comers lists, and being able to roll on the lords of war warlord trait chart would help to make the game more even, but whatever

They're not Escalation units in that they don't use the LoW slot (so non of the other bonuses/penalties apply like Impending Doom).
You're right I used the wrong term, but they fit with the Escalation genre if you get what I mean (Superheavy in non- Apoc 40k).

Agreed, and unless the Codex:Imperial knights contain the Behemoth Rule, there's going to be some issues with where to find the rule Etc (does this mean Knights players will need to own Escalation book? - Does this in a way show how GW assumes all 40k players should own Escalation?)
I hope it has all their rules, and it's back to waiting time =P

It'll need the Superheavy rules as well, and the ones for Str. D weapons.

Indeed, my oversight, sorry.
More issues if they are not in the Codex, in any case...
