Personally, I prefer the litter of the three. It's a decent upgrade with the only drawback being a wider base (as most people use the defacto standard of a 40x40 base for the litter.)

LoS! for. The only reason I would ever take one would be for a themed moulder army, and then ONLY for a warlord going warmachine/chaff hunting. (Which is sort of a waste of a warlord
imo.)
As to War-litter vs. Bonebreaker, I tend to prefer the Bonebreaker. The extra toughness, wound, and better mount attacks make the Warlord capable of shredding through most infantry (I use a unit champ to suck up challenges), which boosts his unit's
CR well enough. I also kit him out with shield, ogre blade (or WAW), dragonhelm and 4++ or 5++ (depending on my
BSB). So he's usually rocking 2+/4++ (with 2++ vs fire). Pretty tough for a skaven, and with him taking up 40% of my front rank it forces my opponent to really split attacks. If I charge, I try to make sure he's corner to corner so he can shred infantry while minimizing attacks back at him.
If I want a Warlord who is going to just hide in a unit, he gets the war-litter though. Of course, that for me is a pretty singular build:
Warlord
-Shield
-Warlitter
-Wizarding Hat
Because I'm crazy like that.
