Drasius, no actual codex has been mentioned by the OP, so specific assistance is impossible without more detailed information. However, since the OP only asked if two Knights at 1000pts is cheesy, and I opined that no, they are not, because you should already be planning on facing two Knights at 1000pts anyway when building an army you know will be facing two Knights, I fail to see how more specific information such as army composition will help.

The answer is: "No, 2 IK are not cheezy in 1k pt games if you're power-gaming yourself or accidentally fielding a counter".

Counters to knights that are not considered cheezy themselves:
- Msu preferably in transports. You roll around killing other stuff and avoid the knights. It's not super fun but it works.
- Fearless hordes. 50 spread out conscripts with a priest, helcults with 35 spread out guyz.
- Summoning. Cause of MSU and expendable bauble wraps.
- Melta/Haywire alphastrike that rolls above average. The game's basically decided in one turn with who rolls better.
