The Hellhound is way better than the Eradicator in my books. Besides the lack of miss potential which has already been mentioned the Hellhound also has a ton of utility as a Fast vehicle that the Eradicator simply doesn't. Look at it this way: the Eradicator does one thing moderately well with a chance to not do it at all with a miss. It can never do more than one thing (shoot its gun) because it is too slow to cap objectives, get line breaker, outrun melee threats, tank shock at 12", drive in fast for a hull multimelta shot, keep up with mechvets, and so on. The Hellhound not only shoots it's gun, and always hits, but it can do all of those other things as well. The only thing you gain with the Eradicator is a bit of armor, and lets face it your armor doesn't matter anyway; you are either going to be grav/melta podded, wrecked in melee, Boltered in the rear, Ded or haywired. In Maelstrom games the Hellhound can contribute more to your chances of victory simply by driving 24" than an Eradicator could by hitting and killing everything it shot at.

For my personal playstyle, I prefer the Eradicator for its sponsons.
I generally take a slow-roll to the middle anyhow, and I rarely play Maelstrom. The Eradicator can take a Lascannon and Plasma Sponsons for 10 points more than a LRBT, fire all it's guns, and have solutions to everything but flyers. And AV14... but no one else in my meta uses it other than a rare shiggles Land Raider in a goofy list.
For the handful of extra points, I find it works better in my style of play, as I don't need a fast tank to "hopefully" cap an objective. I have other things to "hopefully" cap objectives.

I haven't seen anyone mention Flamers, yet they are the guards best CC weapon. I've found especially when I bring lots of artillery is that 3+ Veteran squads with 3 flamers and Forward Sentries is the best speed bump unit in the book. Then once they've been wiped at the end of your enemies turn your big guns are free to blast away the relatively clustered enemy melee unit.
If you're taking blobs go for 30-40 per any less and they're not durable enough to be better then 2 seperate units, any more and a lot of the models are more then likely not going to be able to see what you want to shoot or be too spread out to engage the enemy effectively in melee.
Take your PCSs in Vendettas with 4xFlamers, then drop them for a toasty surprise. Or a non Warlord CCS with either 4 Meltas or PGs with the Ignores Cover order work better then Tempestus Scions.

4th post, but I'd have missed me, too.
4x flamer templates on a unit should wipe them out. Teardrops From Above (flamer PCS in a plane) is cheap enough, a good way to get ObSec on an objective, and a good way to use an underpowered unit.

I would highly recommend a youtube guy named mordian glory. He has a pretty extensive series on imperial guard tactics including infantry, weapon and platoon breakdowns.
