People always said that Imperial Guard and Tau are boring to play agaisn't.
I have play many times in 8th post-codex agaisn't a friend Catachan Force with meele focused infantry, Sentinels, Hellhounds and Ogryns/Bullgryns, very movile and it is a lot of fun.
The same for Tau with Breacher Teams in Devilfish, Crisis and Stealth suits, Kroots hounds and Kroots, etc...
The boring ones are the gunline/defensive castle ones.

But orks to me define what 40k is, ever since the cover of 1st edition, the fungus fluff stuff is crap but they appear to be one of the few armies thats still are fundamentally what they always have been

I'm not sure what you mean. If it's because all our armies look the same, then you can look to the fact that we have literally 1 troops choice and 2 other choices per slot. If it's because our armies are currently better than yours, well, that's not really my problem, and I only really feel bad for Grey Knights, because damn that is some bad rules writing right there.
I like playing against Guard, Tau, Space Marines, and Tyranids best.

Ranged armies have to consider all the same aspects that Assault armies do, and then some. Assault army strategy amounts to "go that way faster and safer," and tactics amounts to "stay behind the LoS blocking thing." CQC armies are definitely harder to win with, because their toolbox amounts to just a hammer, but it's not really fun to play with or against that. I'd rather play a strategy game than push models forward until they reach the middle of the board and roll dice until the last man is standing.
Not that there's not a place for CQC, I just think CQC is best as a special-purpose option to achieve a specific task that will turn the tide, like locking off a tank, or denying an area to movement, not the core premise of an army.

I find CQB and gunline armies both kind of boring, I think the key to fun rests in an armies that can do both. Tyranids, space marines, non-khorne Chaos, Necrons and Eldar all have a depth of play that you just don't get in single aspect armies. I get the appeal of do one thing and do it well, but those armies aren't much fun to fight against, and they feel to simple to play since you only have to actively focus on one aspect of the game.
It's amazing for me to see CQB armies calling out gunline armies for being lame (and vice versea), you guys are two sides of the same coin. whether your plan consist of pitching a tent in fire lanes behind bubble wrap, or treating the game as a half marathon with pinatas at the end there are whole aspects of the game you are ignoring.

My bad for no sisters...Added them in. @Mr.Morden @deviantduck... Great to see all the responses! I must say CSM are super fun to play against just due to the variety of units and me typically having a "good" army to fight against the "evil" army.

While this can be true, it is very rarely so. The units that takes most skills to play with, is the units that requires precise movement and positioning. And units that use all of the five separate movement phases, disembark, move, charge, pile-in and consolidate, gives the player the most opportunities to make positioning mistakes.
This is not really a question of assault vs shooting though. Playing Chimera guard takes a LOT more skill to play than playing with basilisks and manticores. Conversely, the Alpha Legion army that infiltrates and assaults with 40 Bezerkers whenever it gets first turn, does not take much skill to play.
Guard and Space Marines are often run as static gun-lines that takes little skill to play, because they can implement this strategy very well. But neither faction deserves the moniker 'canned strategy' because both factions can be played in many other ways, many of which are both fun and challenging for both sides.

This makes me think that this thread's question is best geared towards people who have played relatively extensively (and possibly owned) many different armies. I assume that there are many people out there (though certainly not the majority) that have bought, play and sold certain armies while having bought, played, kept and kept playing other armies because one army may have been fun and worth keeping while another army may not have been as fun to play for them as their love of the army's concept led them to believe.
And it could also depend on Edition. For example, Black Templars were a bit of a drag to play in 7th unless you wanted to play them like any other Chapter (i.e. take the focus off melee and play the strengths of the Vanilla Codex) but they're super fun to play in 8th because this Edition's mechanics make Black Templars more viable.

I picked SOB, because they're very short-ranged but don't really like assault, so you get the challenges of "how do I approach this problem" like a melee army has, but you have the "what is my target priority and how do I maximize my firepower against it while also staying out of melee" problems of a shooty army.

Movile Infantry Tau with Breacher Teams, Carabines, Stealth Suits and Kroots is a more extreme version of that.
At least SoB's can survive one round of combat

I really want to say Orkz because....waaaagh!!!! But I can't. Orkz since 7th dropped lost a lot of their fun value and went towards lackluster "randomness". In 8th it got even worse. Our glass cannons are now glass pop guns, our elite CC units are useless, our speed freak lists are dead and gone, our Kan Wall is terrible, basically anything besides Boyz, Kommandos and Stormboyz is almost not worth taking. Our one good strategy revolves around taking a plethora of models and getting to grips with your opponent as fast as possible. I have found alternative competitive ways to play but they closely resemble that same strategy. I would have to say Chaos is the most fun now.

To play with I love the AM, I love to flood the battlefield with lots of models. The IG delivers that no matter what forces you choose to take.
The most fun to play against is Orks. Just because of their nature, and the fact of the way they come at you.
