For me it was back when Defilers were first introduced.

It was my DA Terminators vs three Defilers.

The Defilers shot my unit down to one Termi with Storm shield and thunder hammer. All three Defilers charged him.

He Survived and fought bravely and thoroughly against the onslaught of demon engine fury. Lifting his shield to meat the slam of the giant crab like claw of the defiler.

After being pummeled and wrist and arm hurting from the shock waves of absorbing the blows, feet sunk into the ground up to his shins the Defilers had to pull their arms back to attempt a second strike. The brave Deathwing used this opportunity to swing the Thunder hammer round with his good arm into the working of the first defilers from leg, full power strike and with a clap of thunder and a boom of light as the hammer made contact a chain reaction made it's way through the defilers inner works and the first demon engine shut down.

With his back turned he felt the pummels of the other two demon engines into his back smashing him into the ground. His targeting system malfunctioning after the blow, the visor cracked, the Deathwing brother looked up in time to hold up his shield to block the next blow. His arm roaring with pain, the ceramite of his armour sharding away and splintering into the nearby ferrocrete ground. The pain blockers of his surgeries and the support of his armour not doing much to block out the pain at this point as his arm is definitely at least cracked, he pulled himself up off his knee on the ground. The dirt and soil falling from his now stained bone armour, the green hue of his visor drowning out the bright lights of the demon engine spotlights. He launched himself forward throwing the next thunder hammer blow into the nearest demon engine. the blow crushing through the armour plating of the warp right into the heart of the defiler causing it the flinch backwards, squirming away like a crab in a net a portal opens and the engine retreats into the warp.

The Deathwing brother turns towards the final demon engine now towering over him like an obelisk to an ant. A moments rets is all that is needed the first claw of the defiler comes smashing down landing inches away from him on where he was jyst stood as the Deathwing brother launched himself sideways as fast as a space marine can moved in tactical dreadnought armour. a ploom of dust rises through the air as the claw reaches back up into the sky. The next swing from the 2nd claw just being caught in the terminators peripheral vision the brother blocks it just swinging his shield round to block. His arm breaking at the impact a shudder of sounds as the storm shields ceramite cracks and shuts down after the chatastrophic blow. The Terminator swinging his hammer down upon the claw of the defiler with his broken left arm huddled close to his chest rippping the claw clean off the demonic machine beast.

The Defiler swings down with his remaining claw the Deathwing Brother being slammed to the ground being left breathless and at least three broken ribs. The demonic machine that is the defiler raises it's remaining claw for one final blow as the Terminator brother stands to his his feet pushing himself up with his good arm, He reaches for his hammer and charges with what energy he has left towards the demonic engine beast, throws off his cracked helmet as at this point it is only hindering his vision and slams down his hammer one handed into the underbelly of the Defiler. A chain reaction of small explosions and frazzled circuitry courses through the beast causing it to curle up like a spider dieing of poison.

The dust clears and the Terminator is left stood alone, surrounded by the corpses of his brothers, two destroyed chaos demon engines on the ground burning with a purple fire.

He lifts up the ceramite plate with his one good arm and calls for extraction.

One terminator destroyed three defiles single handed in close combat, thats my most memorable moment.

It was either first or second edition,

There was at tactic call Viral Out break that the Space Marines released on my 2000 point ork horde

Viral Outbreak was a contagion that spreads from model to model and keeps spreading to all models withing 6 inches until they make a save or it can't pass on.

It spread to my entire army at the start of turn 1.

Out of 2000 point of orks I had 3 mega nobs, a warboss, a handful of various individual surviving orks, and a pair of dredds

Wiped on turn one and I started taking medi squigs from then on just in case.

I haven't played a lot of games but one of my most memorable moments is ahriman dying in a single turn with full wounds to perils of the warp. It was my first game of 8th I was trying to cast infernal gaze and rolled double 1s and did 2 mortal wounds to him. Then I tried casting smite and rolled double 6s killing ahriman by causing 3 mortal wounds to him. Resulting in my warlord dead and the game lost when he blew up he only killed 1 rubric marine nearby.

I was using my space wolves at the time against a imperial guard player. I blew up his one Leman Russ tank by shooting it point blank in its rear with a bolt pistol. I had unloaded everything else the scout squad had with them. We all had a good laugh.

Severely depleted grot unit of about 6 gets charged by Deathwing Termies.

They kill 2 on overwatch, another 2 in CC before being mulched.

On a less positive note my shooty Ork army camped around a Skyshield bunched around two SAG big meks.

Both roll double ones and evaporate most of my poor Orks, leading to a vicious stomping by my buddies Space Wolves

One more...

A single base of Nurglings hiding behind an aegis line took two full rounds of fire from a Thunderhawk, while the rest of his army just stood amazed and bewildered, cheering the little fellas on...

Back in third edition I had 10 man unit Howling banshees. I charged unit of space marine devastators. Only killed one marine and they completely wiped out my banshees in close combat. This was time when there was not any overwatch and banshees completely ignored armor. I rolled really badly and my opponent rolled really good.

I am known for some phenomenal bad luck in 40K. I played a game using a WB list in 3.5. I made maybe 1 in 5 armor saves, lost all my plasma to over heats, all my Daemons scattered double digits almost directly behind my summoning units, and my lord and termies decided to not even bother to show up.

I have 2.

1 Tyranids vs Necron. Monolith erupts from the ground right in front of my Tyrannofex. Monolith portal opens up, Tyrannofex gets sucked inside
.
2. Tyranids vs UM. After decimating almost an entire UM force the only thing left was a Tac squad consisting of the Sarge and Missile Laumncher. 30 Gargoyles swarm in. Sarge dies. Tac Marine just stands there beating Gargoyles over the head with his missile launcher. Game ended with that one marine still on the table...

Greebo had spent an irritating two minutes in that box. Technically, a cat locked in a box may be alive or it may be dead. You never know until you look. In fact, the mere act of opening the box will determine the state of the cat, although in this case there were three determinate states the cat could be in: these being Alive, Dead, and Bloody Furious.

August 2015, I hosted a 50k per side Apoc game at my place. My friends allowed me to bring Vulkan, because why not. He killed a Bloodthirster, 6 Leman Russ tanks, a squad of 20 Guardsmen, and had the final kill of the game being a Shadowsword. Vulkan alone held up almost 10k points of traitor IG tanks. (someone on my team made him invisible after all)

My best moment would be just after a game. This was back in 5th edition and my group were all new and we were playing a few small 1000 pt games back to back. One of them hadn't made a list so he just put stuff on the table and said that it was about right because "he knew his points". He then proceded to lose quite badly to me, I still had over half my army left. After the game we worked out he had had about 1800 points on the table.

Another good one was my first game of 8th. We were having a really good, super close game and it came down to my wave serpent vs 3 demons along with a minor hq of his. He charges with everything and kills me with his last attack. He starts celebrating a very close win prematurely. The tank then explodes and takes out the rest of his models.

We had a halloween special at the store with a challenge:
1 HQ unit of the player's chosing vs 40 Plague Zombies and Typhus (Typhus had to stay back until the Zombies were done for fairness' sake).
Several people tried it, with Chapter Masters, Yarrick, and others. I used ol' Ghazghkull Thraka. The zombies immediatly piled up on him, and in the first turn brought him down to 1 HP, but the following rounds he shrugged it all off. That in itself was already a success, because nobody else even got that far. Then the fight against Typhus came, and Thraka, having the wonderful Waaagh!!! ability that makes him near-immortal, whiped the floor with him. The shopkeeper could not not believe that someone could actually WIN this, but I had done just that. In fact, I was the only person to do so.

I didn't play this game but watched it. A squad of 30 gretchins somehow managed to get into cc with a khorne bloodthister, do like 10 wounds with 0 casualties in the first round of cc... surrounded the thing and finished it off in the 2nd round of cc. Poor bloodthirster must have accidentally stumbled into some Snakebite grots.

Pretty sure this was 5th ed but I tried to assault a single guardsman on the 2nd level of a ruin with my deamon Prince, it lacked assault grenades so struck last, bayoneted in the eye for my troubles and died .... give that man a promotion!

One 30k game during a mission where both sides got to freely recycle Troops I dropped Tylos Rubio down in my opponent's backfield to grab an objective. He was playing a drop-pod World Eaters list so most of my army was stuck on my end of the table fighting most of his army, but a couple of chainaxe squads showed up from his table edge when they got recycled, so Rubio got to face down 20-odd screaming proto-berzerkers on his lonesome and ended up just carving through them, and ended up chasing the last four off the table.

Special mention because it was the first time I ever saw someone use fortifications. Someone brought cannons (vengeance turrets or something I think?) and fired at my Grey Hunter squad. They rolled for scatter and the blast exactly moved onto their team mates unit of Chosen from Dark Vengeance and obliterated the lot of them.

And that's how I learned about why scatter is risky.

This was way way back in the misty times of early 3rd edition,
I had just re-purposed my Orks to the then new Codex:Armageddon speed freaks list.

My opponent had an infantry heavy Imperial Guard army (all 2nd edition metals, one platoon of each: Cadian, Catachan, Mordian, Tallaran, Valhallan) His army spread across the entire long edge of the board.

I set up heavily to one side, hoping to reduce the fire I would be taking.

- First turn, I roar forwards with all my vehicles only to have them all but the warbosses battlewaggon blown right out from under my boys (at this time trukk boyz only got injured on a 6 when their trukk blew up so I still had plenty of boys left)

-Second turn, All my boys foot slog towards the guard dropping like flies to massed lasgun fire.
The battle wagon gets close, oh so close, to the enemy line before the combined fire of every lascanon he has take it down.

-Turn three, the ork charge falls just inches short of making contact as every last boy dies to lasgun fire...except for the mega armoured Warboss - the Nob mob ablated away under the withering fire as the Warboss makes contact with the extreme right end of the enemy line.
-Combat eschews and the Warboass and his remaining Nobs start chewing through Guard infantry like buzz saws.

-Turns become an abstract concept at this point as we play out combat after combat, my opponent never thinking to make a gap and gun down the stranded orks, keeps feeding in infantry squad after infantry squad into the combat desperately relying on the single power weapon on each squad leader.

-slowly the Nobs are dragged down leaving just the Warboss crunching his way through the mass of bodies until he hits a small stream, the only guard left are a trio of lascannon teams on the other side, the Warboss charges and is hampered by the stream just enough to end up 1 inch short...and takes 3 lascannon blasts to the face and goes down.

I have no Idea how many turns we played, or at what point we forgot about morale (perhaps it was even a series of lucky Leadership rolls) but that ork Warboss single handedly wiped out 6 feet of guardsmen.

I haven't been playing long enough to have too many of these moments, but yesterday I had a pretty crazy moment with my Wraiths. They had failed their much-needed charge into a pair of Scorpius Tanks the prior turn, and were about to get charged into by a buffed up Daemon Prince. 10 hits, 10 wounds, 10 saves. Only three of those claws needed to go through to wipe the unit, and that improbable roll let me fall back and charge the tanks the next turn, tying them up for the remainder of the game and being a major reason for my victory.

Yesterday I had a Stormsurge explode in my backfield and take out my poor Coldstar while heavily damaging several other nearby units. That was really annoying.

Chain reactions, always chain reactions.
Space Wolves vs Imperial Guard.
Final turn so everything is a tad damaged Murderfang and his Shield/Axe dread partner make combat with a Leman Russ - Murderfang fails to hit the broad side of a barn but the shield dread does the damage and destroys the Russ then consolidates into another Russ with hopes of stopping it shooting Russ tank shocks Shield/Axe Dread and the dice gods smile.

Shield/Axe dread explodes damaging the Russ, Murderfang, a nearby squad of guard and killing a Stormwolf.
Stormwolf explodes damaging Murderfang, killing some more guard and killing the Russ.
Russ explodes killing Murderfang and some more Guard.
Guard take a leadership test, fail it and the rest of the unit dies.
Double board wipe.

I don't break the rules but I'll bend them as far as they'll go.

I will always remember this one moment, my Orkz vs a Crimson Fist army back in 6th or 7th edition...

He drops down a Terminator Captain solo (admittedly a bad decision). I charge in with just a handful of Ork Boyz, scoring some hits, and only 3 wounds.

Confidently takes his saves, and up comes 3 Ones. It has become the proudest moment a simple Ork boy has ever had in my armies history.

I have several moments to share.

I was Playing Blood Angels in 5E tournament, first time ever, while I was still learning the ropes, 1850pts mixed list lead by Mephiston. The first match is vs. Tyranids. My opponent carefully deploys his Hive Tyrant far enough from Mephiston to avoid first turn assault... But he didn't count in Mephiston's Fleet!
I proceed to win roll-off for the first turn, and move out with Mephy, rolling 6" for fleet, meaning that I easily make it into combat with Hive Tyrant, which did not have a lash whip for some reason. This kills the Hive Tyrant.
Opponents face was absolutely priceless when I effortlessly removed his most powerful unit on the first turn. From there on Mephiston continued his rampage through his army unmatched, racking up kills worth a whopping 965pts
The rest of the tournament went south, but I had plenty of fun

Here's another story from my first tournament, this time epic times for my opponent. I'm matched with Chaos Daemons, Kairos, Daemon Princes and assorted goods.
He wins the roll-off for first turn, and moves up with Kairos to Doombolt my Land Raider stuffed with Death Company, only ranged weapon on his list able to harm it. He starts rolling...
Hit. Roll 6 to pen, glancing hit. Roll 6 to damage, -2 for glance, +2 for AP1. Land Raider explodes on turn 1!
At this moment I noticed we forgot that Night Fighting was in effect, and my opponent was very sporting and agreed to do it over, since that was pretty much all he had done so far. He starts rolling again...
Passes Night Fighting check of 18" or so. Hit. Roll 6 to pen, glancing hit. Roll 6 to damage, -2 for glance, +2 for AP1. Land Raider explodes on turn 1! Again!
The rest of the match went pretty horribly, Mephiston getting gangbanged by two Daemon Princes, etc.
Just As Planned, the match

Meanwhile, my friend over at another table passed all 21 of 5++ saves for his biker nobs vs. genestealer horde - with GW dice straight out of box, so no chance of weighted dice.

Again playing Blood Angels during late 5E in a tournament. 2k pts, Mephiston, Dante, Sanguinary Guard, Priests and ALL the assault squads I could get, always starting with just Mephiston on board, rest coming in with Descent of Angels.
I had felt a bit funny the whole day, but decided to hit the tournament none the less. I was on roll, beating Loganwing and some other pretty good list. Only the final round remaining... vs. Dark Eldar skimmer hell feat. Urien Rakarth and his grotesques.
Final mission was kill point mission, meaning loads of potential to score from his MSU army. Board has basically no LOS cover, and only a few tiny patches of area terrain, so the match would be absolutely brutal.
He deployed almost to the edge of his board, clumped up. I was able to teleport in Mephiston to the middle of the board due to mission special rule. The rest of my army comes down, bolters, meltas and flamers blazing, raiders, ravagers, venoms and dark eldar falling left and right. They return fire with massed splinter, blaster and lance fire accross the board, FNP saving from the worst of the massed shots, but the heavy weapons really took their toll among the space marines. Every turn both sides take massive casualties, but the glasscannon nature of Dark Eldar is showing.
The brutal massacre goes on to the 6th turn... All I had remaining of my army was one Sanguinary Priest and one Assault Marine Sergeant, at the brink of getting tabled. To my luck, the match ends to the end of turn roll, and I reap a massive victory with kill points!
In the end I ranked in 2nd place, losing 1st place to a better painted army, although I got the most score from the actual tournament missions. BUT! The 2nd place prize was a Contemptor Dreadnought, and I ended up getting just what I wanted. Too bad about that 1st place trophy though. Oh well.
Also, I found out the reason why I had felt funny the whole day. I noticed I had 39*C high fever when I got home. Apparently I'm an unparalleled general when my head is spinning!

Later during 5E, I'm having a practice game with the same orks player friend mentioned above. 1,5k pts, Blood Angels vs. Orks.
I have Reclusiarch backing up Death Company and DC Dreadnought in Storm Raven, putting well over 50% of my points in one basket, backed up by some minimum Assault Squads in las-plas Razorbacks.
He went Biker boss+Biker Nobz, 6x30 boyz and Boss+Nobz in a trukk, simple and effective.
Things start off pretty standard, Death Company and dreadnought clashing with the Biker Nobz and Boss...except he is unable to cause any casualties. He fumbles his attack and wound rolls, and what few get through are stopped by power armor and FNP.
The fight is over soon as the bikers are routed, and from there on, the match is a one-sided steamroll for my Blood Angels. All he managed to do to my units during the entire match was his final standing Nob knocking out my DC Dread's other Blood Talon
Then the rest of the orks were turned into a green mush.
We agreed that it was probably the most canonically accurate tabletop depiction of Space Marines vs. Orks.
Even to this day, he is slightly embarrassed of that battle, but gladly tells the story of how I seem to steal his otherwise unbelievable luck with dice whenever we're playing on opposing teams.

And then there was that one time, during a 6E Apocalypse match, 9000pts per side, when my Aegis Defence Line's Icarus Lascannon finished off the enemy's Stompa with its AI targeting (BS2), after the R'Varna of my team's Tau player had unleashed a crippling double-volley on it.
