Buffalo wings supposedly originated in Buffalo, NY as a way for restaurants to find use for usually discarded bits of chicken. They have caught on nationwide, and for about 50 years have been a staple food added to pizza orders when ordering out.
Regardless of where you're from, I assume you know what Blue Cheese is? It's just the most common sauce served with them. "Buffalo" style refers to hot sauce made with Frank's red hot, butter and possibly cayenne pepper.
(Is from new york, has worked at pizza shops.)

aha you dont really need THAT much credit to know a thing or two about wings defiler, but hes pretty much right on...
take and seperate the two parts of the chickens wings (with meat still attached to bone), and fry//bake them, mix it around with some hotsauce and butter (or sometimes bbq or other sauces)
dip in bleu cheese or ranch or whatever, and you have the main ingredient for a side for pizza, eating contests, bar food, etc...
anyway, i wish i had cought on to those dragon toys...
those are pretty perfect...

"Buffalo Hot Wings" have a doubly misleading name
They do not look like they could help a Buffalo fly. They're usually quite small. Nothing like the big ones you'd get at KFC or some other chicken fast food place.
Also, in most/many places, they're not just wings. It's a common happening to see small little chicken legs in there, too.
My favorite is BONELESS Hot wings. Essentially, it's "Hot Wing" style (small) chichen strips (I have "on-the-bone" chicken).
The Bleu Cheese is not simply Blue Cheese. It's Bleu Cheese salad dressing (usually quite watered down).

I'm still amazed at how many people think this. The wing of the chicken is both of these pieces, in fact there's a tip also that they normally don't serve because there is very little meat on them (but it is quite tasty because it is usually very crispy  ). Next time you have your buffalo wings, take a "drumstick" and a "wing" and hinge them together in a V and you'll see your KFC wing.

Chicken wings have three sections. The section closest to the body of the chicken, sometimes called a "drummette," looks like a small leg, or "drum stick." The second section has two parallel bones in it. The last section is very small and doesn't have much meat on it; this is usually discarded.

Well, the chicken is just chicken. What makes it good (or terrible) is what kind of sauce the wings are coated in. Typically, the sauces are varying degrees of spicy with a hint of sweetness. You can also find a wide variety of sauces from lemon-pepper, to asian inspired and painfully hot.
The reason you usually see things like blue cheese dressing served with wings (though I prefer ranch) is that the chemical that causes the "heat" in the sauces is an oil and is therefore not water soluble. The chemical will, however, dissolve in fats or alcohol. If you get a really spicy wing, you can cut the heat in your mouth by eating a fatty dressing. Also, since the chemical causing the "heat" is soluble in alcohol, it is very common to drink the beer of your choice with hot wings.
Here is an example of what a list of hot wing flavors might look like. This is a menu from Wild Wing Cafe, a chain restaurant specializing in hot wings.

They're a treat, although the attraction is usually the different sauces. Ribs used to be considered a "trash" part too until folks figured out how to make them delicious.
Usually around here ranch dressing is the typical dipping sauce rather than blue.
Back on topic, good tip - I like this sort of knowledge, although my princes have already been winged up.

I'm aware, re: multi-parted wings.
I'm also aware that, as I stated, many places use drumsticks. I'm not referring to any part of the wing in that.
Also, boneless wings are not wings with the bones taken out. This should prove that not all "wings" are actually wings.

Most/many restaurants have watered down their dressings. Allegedly, we don't notice, and it saves them a lot of money. : )

Given that bleu cheese dressing is supposed to be thick, rather than runny, it'd be hard not to notice.
If they cut quality like that, I simply don't go back, and tell my friends that the place is "low-quality". So it's not that people don't notice, it's that they only attract and retain a less-discriminating customer.
But like any good non-Customer, I never discuss my complaint with the Management, only other (potential) Customers - after all, cutting quality is fundamentally a management decision, so it's pointless to waste one's time over it.
