Green stuff tends to become a little rounded as it dries, so is good for 'organic' things, cloth and the like. Grey stuff keeps and edge better, and is great for armour, weapons and structural things. It can be filed and cut more easily than green stuff once it's dry, and I think it dries harder too.

Im sure there are other differences too, but those are the ones I've found most useful to know! Hope it helps (more than sluggaslugga's answer, anyway )

Depends what you mean bulk, but Maelstrom, Miniwargaming and wayland have stores in the UK. I am pretty sure a Google search will get you stores that sell it pretty easily.

Grey stuff is good for all round sculpting as it is firmer than GS as Scarper stated.
Brown stuff is harder still and is good for crisp detailing eg straps, where you want a good crisp edge.

I know all this because I am a sculpting God.

Haven't needed to check fpor myself but has the great brownstuff shortage of the summer been resolved yet?
