I've been playing my orks for almost a year and have recently been getting in to a few tourneys. I have been running the following list with some mixed results. I would greatly appriciate any constructive help on what I should do to make this a bit more competitive. (Seems like I play a lot of IG and Marine variants.)

I use the Koptas, to play hide the trukk, and try to create a threat to armour so I can get the trukk's there. And I try to use the bikes to grab objectives.(since they count as troops withthe warboss's.)

I think you're paying a bit much for all the koptas. 3 single kopta units with buzzsaw and rokkits make a good suicide anti tank weapon. Perhaps you should drop a warboss for a KFF mek that can protect your trukks a bit more

So replace both koppta squads with
3 single kopta units each with buzzsaws and TL Rokkits at 70pts each
And replace 1 Warboss with
Big Mek w/KFF for 80pts.
Those changes leave me with approximatly 154pts, so another trukk squad at 152pts or 2x5 man loota squads at 150pts

The changes you've agreed to are spot-on. You might consider putting the Boss on a bike and adding a Nob or two with the extra points.

I must say I'm not big fan of trukk spam... But you have 4 trukks so ok... Would think of painboy and lootas... And deffkopta advice is quite solid too..

Greetings!
1. If you insist on keeping the nob bikers, add a piece of wargear to one of the big choppas for wound allocation. A Waaaugh! Banner would be a good choice; or if you don't feel like you have the points to spend on them, an ammo runt would be fine - that gives you three wound groups per unit of nob bikers instead of two - meaning all three bikes can survive an extra wound.
2. This *is* a mechanized world we live in, and I think its important to capitalize on the anti-tank you can present first and foremost. If you add boarding planks to your trukks, the nob now has the ability to swing at vehicles without having to disembark - I think its a crucial piece of wargear.
3. Reinforced rams are *also* a crucial piece of wargear. They let you reroll dangerous terrain tests for your vehicles, and as often as not, there is terrain between you and where you need to go.
4. Single Deffkoptas - with a twin-linked rokkit and a buzzsaw can alpha strike. You can scout them across the table, pot-shot the rokkit into a vehicle, and then assault its rear armour. They are effective distraction units, but sinking a lot of points into them (IE, multiple koptas in the same unit) ties up points and takes them away from being a distraction unit into an "actual" unit...where the points could be better spent on anti-tank elsewhere.
5. I would definitely replace one of your warbosses with a Big Mek with a Kustom-Force Field; making all your trukks have a 4+ cover save if you keep them within 6" of the vehicle the Big Mek is in.
6. Lootas: A unit of 5 of them only costs 75 points, and they have as good of a chance of taking down enemy vehicles as anything else.
7. Since the bulk of your forces are tied up with boyz in trukks careening across the board, the last thing you want to do is have to split them apart to deal with objectives. Why don't you insert a 10 model gretchin unit? For 40 points, you have a unit that can babysit your table edge, rear objectives, and if you spread them out with coherency, you can grab two objectives with them, have them go to ground to sit on a 3+ cover save if you have terrain available for it - leaving the rest of your army available to go maul the enemy.
8. I would strongly advise that you find the points for a single battlewagon. The KFF transport is going to be a priority target, so give him something beefy enough to survive in. Stick a Deffrolla and a boarding plank on it - you can take it as a dedicated transport for a unit of nobs, and taking away bikes from one of the units will almost pay for it.
With that kind of setup, you've got a battlewagon with a trukk escort all getting 4+ cover saves as it moves across the board, and multiple distraction units in the form of deffkoptas, another nob biker unit, and long distance Lootas all vying for an opponent's anti-tank efforts. Personally, I'd drop the nob bikers all together and stick all the nobs into the battlewagon, but it depends on what you want.

Most of what DoP said.
The list is screaming for a Mek with a KFF. The deffkoptas in units of 3 are a bad choice as they can fail leadership and have large number of points fleeing the table. I would go 1 Deffkopta and warbuggies or 1+1 Deffkopta. Lootas are great at putting a result on something that can pop your trukks.
I don't feel so hot about the BW. On it's own it is too easy to get the side armor shot and your opponent should have something in the army that hurts it.
I would a) try to get another trukk in there b) Beef up the nobs
