On deciding purely on a "most interesting model to paint" so which of these do you guys think would be the best?

Bearing in mind I looking at painting a SM vehicle but its more for aesthetic purposes than for the gaming side

"I like being shorter than the average person, makes the enemy work for their target "

"All is fair in love and war... unless someone comes along with a bigger weapon, then its not fair "

Dreds are pretty interesting. If you are looking for free hand, try a baal predator but for just painting, dreds.

I'd say a Land Raider, but it isn't on your list

Problem with land raiders is theyre a tad too expensive for my liking and too many large flat surfaces that i wouldnt know what to do with.

You looking to weather the thing up? The Vindicator gives you license to go buck wild on that front, what with siege shield and the accompanying expectation of crashing through demolished city streets, all the while being peppered by small arms fire.

Im after something that I can try an make a really nice looking show piece out of. I know im not good yet but ive done a razorback so far, an i got a rhino to do first so this is my next project after that, something that I can weather or damage or whatever you know? Personally I do like doing lots of different colour schemes and ideas so its really whatever takes my fancy and as imaginative as I can make it using paint (no real GS practice yet haha)

I think once ive gotten to a competent level Im going to get a land raider or a FW chaos hellblade fighter. But not for a long while yet

If you're not into freehand, I suggest a dread too. Not too much flat area that calls for freehand, enough options for weathering and gore, and other details.
