Whatever you want it to be. Honestly.

According to fluff, they're a codex chapter, but look at the Marines Codex and you've got sternies with blue helmets, not red or white ones. Fluff also states they paint both fists red to distinguish veterans.

I paint the trim of the shoulderpads red for a more visible difference than both fists, but also use old LotD and BA models that have loads of regalia: laurels, gems, bones, flames, etc. that I also paint crimson.

All comes down to what you want to do.

No worries. I've been mulling over the idea of using the Rogue Trader heraldry for my Fists, where the color of the helmet stripe indicates rank and MOS, with weapon badges on the pauldrons indicating what weapons the trooper has trained with. Graviton gun FTW!

Cause GW painters don't read the fluff. Hence why Cypher got painted green

I was also thinking of differentiating veterans like Sternguard/Sargeants.

Several Codex chapters have Terminators and Veterans with white helmets,with the Sargeant of said squads having a white helmet with a red stripe.

With CF's, you've only got a simple system of 1 or 2 red hands - a bit lacking... The Rogue Trader reference is a good reference, and I think someone has posted the pictures from the book detailing the helmets.
