First things first, Hello. This is the first post from a long time lurker of these forums.
Anyway I have played pure inquisition for many years now and in the new GK codex the psy-riflemen dreadnought seem to good to pass up. However, they don't seem very inquisitioney so does anyone have any ideas for a walker conversion or proxy model?
I was thinking of using the forge world Imperial Guard Sabre Defense Platform with autocannons.

Consider though that a full inquisition army isn't that viable anymore imho due to the lack of allies...

Which is why he's asking for stuff to count-as a dreadnought.
True but the henchmen warbands don't really offer the same variety infantry platoons could offer (though they do offer quite some good supporting units). I admit I haven't tried, but I dunno if it's possible creating a viable gk army without GKs, even counting-as the vehicles as something inquisition could requisition.

A full inquisition army is viable, and it is what I am planning on doing. Coteaz as an HQ lets you take Henchmen as troops. Second HQ could be a librarian. (Deathwatch Marine maybe?) Henchmen can be built into either Strong close combat units, (crusaders and Death Cultists+hammerhand and Rad grenades from a Tech Marine). You can also get MSU Special weapon squads (3 guys with 3 plasme guns or whatever) You can Also get a decent mixed purpose shooting unit with Jokaero (2x Jokearo, 3x warriors with Meltaguns, Shoot at range, 2x heavy flamer up close, random bonuses) For your elite slot you can take Assassins, maybe a Tech marine ie. grenade bag (just have the Techmarine be a souped up Tech Priest) Fast Attack is Storm Ravens (Aquilla Lander with extra guns or something like that) Heavy Support Dreadnought (souped up sentinel) or a Dreadknight (summoned greater deamon for Radical Inquisitors). A little creative modeling, and you have an army ready to go, and probably a pretty decent one too. (There is not much that can match an Imperial Guard Platoon in terms of Variety, there are few other places where you can get 5-6 units in one FOC. Henchmen are more similar to Veterans than they are to platoons. People make Veteran Based Armies all the time.)

The only problem with Inquisitorial armies is that you may be limited to only 7 Henchmen warbands in total (and that's if you pay for a second inquisitor). Depending on what you take, you might be a bit hard pressed for units (so MSU might not be a viable tactic as it will leave you somewhat gimped).
That being said Henchmen can be exceedingly powerful and customizable, as svendrex detailed. I would like to add on that Assassins will be deadly in this respect, as you can use a Vindicare to snipe a Invul-protected character (such as a Archon with a Shadowfield or an Eldar Farseer) and deny them their safety, or blow up a tank with the turbo penetrator, as well as snipe Power Fist sarges to protect your Inquisitors from ID. He can also take out crutial characters for certain armies, like Officers to deny Guardsmen their Orders and such.

Just remove underslung weapons with autocannons, and give it a small turrent on top with 2 autocannons...
The AT 43 Firetoad, pretty cheap now that AT 43 is almost dead...
Has same base size and model size as a dread...

A good counts-as would be a sentinel with same wargar represented on it. Something an inquisitor might be more likely to have on his own ship for a particularly baddass henchman.

This is my version of a counts-as dreadnought based on the Sentinel chassis for my (slowly expanding) Deathwing army. Slightly different weapon pods and you're good to go

Or, if you're not planning on including any Dreadknights, consider making a 'mini-knight' dread from the Dreadknight kit, by removing one leg joint (to make it closer to Dread height) and possibly doing the same with the arms, and definitely replacing the horrible pilot 'baby harness'.
Or more simply, a lot of people think the Venerable Dread looks quite GKish - making the AC arms would be the only difficult part.

Sentinel would need heavy modification I think to keep it looking right. I'd anticipate a heavy re-working of the cockpit to accept weapon mounts either side, and then a bulking up armor, add heavy drum mags. Last in line is upgraded powerplant.... then add more armor to legs etc. I think it would be do-able if combining with a dreadnought kit for some of the parts.
On that note, I've been tempted to rework the sentinel for a very long time...
