I have about a 1000 of Eldar and want to start an army that is the poler opposite to eldar, and not a big army just about 750 points.

Just kidding...
The pole opposite of Eldar would be an army with very few specialised units (or lots of units) and can take a decent amount of damage (or have enough models that it doesn't matter)
Either Orks, IG or SM...
My personal favorite out of those is IG.

Orks all the way I would say.

Technology:
Eldar - Some of the best tech in the galaxy
Orks - Ramshackle equipment, that only works because the orks believe it should work(seem to recall something like that from fluff somewhere).

Physical:
Eldar - Frail
Orks - Tough

Population:
Eldar - Last remnants of a dead empire
Orks - One of the quickest reproducing species in the galaxy

Power Structure:
Eldar - lead by wise seers
Orks - lead by the biggest and toughest
