There are a number of good ways to paint eyes. The one I first learned to do was to paint the eyes first:

with the face only undercoated, put some white splotches where the eyes go. Then go back and put some vertical black lines over the center of the eyes. After that, you paint the face around those eyes.

I use a number of other methods also, but I think the "eyes first" method is the least intimidating place to start.
