What exactly does it mean when t says a unit may replace it's CCW and/or it's pistol for the options below? For example in the entry for Death Company in the Blood Angels codex it says they can replace their boltpistol and/or chainsword for a power weapon, power fist or thunder hammer. Any clarification would be great

This means you can replace the CCW for one of the listed options, and the bolt pistol for another of those options. Or you can replace only the CCW for one of the listed options. Or you can replace only the Bolt pistol for one of the listed options. So you can: Replace the CCW for a thunder hammer. Or Replace the Bolt pistol for a thunder hammer. Or Replace the CCW for a thunder hammer, and replace the Bolt pistol for a thunder hammer, giving the model 2 Thunder hammers. but losing the ability to shoot, since it would have no ranged weapons left.

Thanks for the quick response! So just to extend this question to a specific example regarding something me and my friend were talking about.
In the specific example of death company, they say you can have them equipped with either a boltgun or a bolt pistol. Can you equip them with a bolt gun and a bolt pistol? I said yes because there is nothing in the rules to prohibit this and I know my nobz can take a big choppa and a slugga. He says they can't because a boltgun is a two handed weapon so you can't model it in such a way that they have a two handed weapon in one hand to make it WYSIWIG.

The entry, under Death Company, in the Wargear section, says, "Boltgun or bolt pistol". You can pick one or the other, but not both.

I know you can't have both, but if you were to take the boltgun instead of the bolt pistol you would still have a chainsword, right? And thus still be able to exchange it for a thunder hammer, power weapon or power fist? The debate really boils down to if death company can have a boltgun and a thunder hammer.

yes, you still have the chainsword.
for practicality purposes, in the option section, Boltgun=Bolt Pistol for swapping out.
this gives you the ability to swap out your bolter/bolt pistol for a Power sword. you have 2 CCWs(Chainsword and Power Weapon), but no ranged weapon. naturally, you would more likely swap the Chainsword for the Power weapon and keep your pistol.
you could also swap out both weapons for 2 Power weapons(although no extra benifit is gained with a 2nd power weapon, so thats 15 points for nothing)
