In my experience it mostly consists of hoarded infantry blocks of 30-50, where 1 person makes a death star and decimates every unit they touch. How do you counter this? I am mostly a dwarf player so the big magic spells are out. I read Red Zeke's battle reports and I see a lot of units 10-30 strong which I like, more tactics and screening units. How do I counter the death stars of my area?

Hit it with all the shooting you have and don't let it engage you for as long as possible. Gets it's ranks down, then try to pin it in combat, flank.

Grudge throwers are nasty, and I've yet to see a reliable way to kill a dwarf lord with shield bearers, and all the runes of ward saves and armor saves you can fit in. I think 1+/4++ no greater than S5 or something. Really annoying. Flaming cannons work pretty well too. Other than that, screening units to try to get it facing the wrong direction or held up for a turn, to let more war machines go to town. The all points in one deathstar approach usually means the rest of the army is less than stellar.

Anvil + long beard rangers with rune of slowness.
You can block his path, and he will only charge very short distances. M4 units average a charge of 4". If the long beards stay in front, and keep backing up, you can bring the death stars advance to a crawl, giving you ample time to pummel it with warmachines.
