This has come up a few times in games with friends and i just want to make sure we are doing this right.
Lets say a group of assault marines and death company assault a group or guardsmen. Death company are i5 so they go first and kill a good few guard. Can the guard player then remove all his models that are in b2b with the assault marines so none can attack? it this right or wrong? also can he also remove the men around a powerfist to stop it from attacking?

The assault rules tell us that we determine which models are allowed to attack which enemy units before ANY of the models involved in the combat make any attacks.

We make this determination each round of assault just before starting to count down from Initiative 10.

Funny, I've had a guard player do the exact same thing to me.

In reality, you determine who can assault before swings are made, then you start swinging by int order.

That would be someone stuck in 4th edition, which is when you COULD do this.
