I know everyone is saying the only two non-competitive armies in WHFB are Brets and WE, but every Dwarf BR i see, or Everything i read about dwarfs... they seem like they are good, but almost not good enough. They aren't bad enough for players to whine for a new book, but they aren't really as good as armies like HE, WoC, Skaven, etc.
Correct me if i am wrong, which is quite possibly the case. Fact of the matter is, I haven't played a single game of WHFB. I haven't even started collecting.
I just love Dwarfs and their fluff (I am reading the Dwarf Omnibus as we speak.) I just don't want Dwarfs to turn out like Orks did for me in 40k; I loved everything about them, but 80% of books out there (mainly SM) can beat them easily. And I love playing the game, and love the armies, but i just want to make sure i can have a better W/L then 4/13. You know?

You really can't even put 40k and fantasy into the same realm. 40k is very unbalanced while fantasy is very balanced including Brets and WC. Dwarfs remind me a lot of Orks though as they are one of the few armies you can run 3 different ways, for example with Orks you can run a Kan Wall or Battlewagon Spam or Speed Freaks. Dwarfs have a few builds as well that vary in tactics and are fun and competitive. You can build a gun line with war machines and shooting units, you could create very strong combat units, you seen the stats on a Hammerer? WS5 S6 (with great weapon) and T4 with Heavy Armor. Or you can build a ninja army utilizing scouting rangers and miners and be in combat on turn 1, add in an anvil and that big unit of 35 miners that just showed up can also charge, which is unheard of in units that come up from "reserves" let alone on the enemy's board edge. Ohhh and that magic army that is tearing everyone up at the game store, well you can have 3 "dispel scrolls", 5 extra dispel dice each turn one that is taken from the enemy's power dice pool and +2 to dispel, +3 really but with an overpriced rune. Check out the battle reports forum Red Zeke has some great ones out there and I gotta give a shout to Boss Salvage and his Dakkacon thread way to bring the Slayers there Salvage, I love it!

In short woc are also not that good if set up poorly as in build a solid army and those half pints are scary.
Just madness.
When I look at some BR now it still feels like ah why do you do that that is a terrible combination.
Point being read the army book and the magic items in the brb and you can make a nasty army just a lil hint the cannons and other war machines as well as the anvil quite effective and scary.

So are all builds of the army competitive? Or do I have to always take Anvil, or always do a gunline, or anything along those lines. I want to be able to switch up my list so that the army's playstyle never gets old, are there anythings I should avoid?
Also, what do you guys think the funnest list for dwarfs would be?

Well I mean you dont always have to do the same thing its just make sure units work well together other wise its just a waste.
Fun half pints are all cc its kind of scary so nasty they hit hard adn ya good times.
Combat lords are nasty as well.
Also anvil is really good thats why its a good idea to take it.

Any army can be competitive if you build and play it right.
Just read the books and toy around with what youd like to do. What is your play style etc etc.
I must admit im a horde cc player.
Gobbos and WoC but i also have a WE army for when i feel like screwing with the club members
People say WE arent competative but im 5 win to 0 loses so far.

If you play against an army and/or player who won't use a lot of magic OR lower point games then Anvil aren't as important. But at 2k and above it's a must. Gunlines aren't a must either but if you wish to go to tournaments with your Dwarves then yes, I would say that it's a must. But I would always include at least one Warmachine if I played Dwarves.

Yes, dwarfs are competitive especially when it comes to wealth and craftsmanship. Dwarfs are constantly trying to best each other with (and other races as well) finer constructs. I would imagine dwarfs compete in
many drinking games as well.

Dwarfs are absolutely competitive.
The thing to keep in mind with Dwarfs, and with any WHFB army really, is to play to your strengths and build a list that has can preform where you want it to.
While there are indeed 3 major builds, you're not restricted to just those 3. It really comes down to ensuring that the units you take are effective for their points. So even the less "competitive" units like Slayers can still be thrown into armies and come out on top without too much hassle.

They are competitive and they do win games.
Its just people dont build lists playing to their strengths and are just putting units together.
This is very sad to see even with other armies, I mean fighting a good opponent and you loose is 1 thing but some people jsut cant play a certain army.
The hald pints are good at shooting and cc.
Focus on one with a bit of the other since even if you go with a cc army a cannon with flaming cannon balls is kind of too good to pass up.
