So, for example, my Carnivean could cast Spiney Growth on a Shredder? Would he then gain 2 fury points?

Yep. You activate the Carnivean and force it to cast the Spiny Growth on the Shredder (giving the Carnivean 2 fury in the process). You can't use the Carnivean to cast the animus if it runs, however.

The Carnivean casting the animus is the one casting the animus. The one that receives it can then go and do what it wants.
And stuff.

Short answer has already been answered 'yes'.
Slightly longer answer is that the mechanics for a warbeast casting an animus are basically identical to a warlock casting a spell (but animi casting is not affected by things that only affect spellcasting, like Lamentation). As such, things that you normally cannot do while spellcsating (like running afterwards) are not possible, and things that don't interfere with spellcasting like charging, attacking, moving, etc. are just fine.

It is also worth mentioning that unlike warlocks, warbeasts can only cast their animus once per turn.

It is also worth noting that when the Warlock casts the animus as a spell, it counts as both a spell AND an animus, with all restrictions of both applying.
