I'm trying to save while simultaneously start collecting a GK army (i know, it sounds impossible). I was looking at using mostly Grey Knights in the army, trying to minimize henchmen and all that. What would dakka recommend to get me to 500? I have about 15 of the old GKs with halberds to start. I've also got 1 termie and a vindicare assassin.

You've already got between 500-600 points of legal army if you run the Terminator as a Brother-Captain or Librarian, and the 15 pewter PAGKs as a 10-man Strike Squad and a 5-man Strike Squad. Throwing in some psycannons+some miscellaneus upgrades, upgrading to your HQ to a Grandmaster and adding in the Vindicare will probably push up to 750, actually.

You've got a pretty good start already with what you've got. However I'd advise that you think about what kind of list you want to run once points get higher and build to that list, since there are a huge variety of builds that can come from just running pure GKs out of the codex.
