Ok, so I'm going to run a 2.5k army with a Slaan, 20 temple guard, saurus calvery and a bunch of saurus.
Now would it be better to use an Engine of the Gods, or an Ancient Steg with chief+warspear?

Both work, but I worry more about the engine. Saurus grind in combat for a very long time, and the area effect wounds that the engine cranks out is often better than one good round of impact hits.

Engine of the Gods all the way, and you STILL have an Ancient Steg. just without the Howdah weapons.
the Engines abilities are very good at buffing your entire army while the Ancient Steg is just a beat stick.

EotG are better overall for what you get. One problem is that you might be tempted to use the Skink for magic. DON'T. The Slann should have all the dice most of the time. Besides, the the 5+ ward should be used until you hit combat, then spam the area damage. My only exception to casting with a Priest is with Tehenhuain, because he's a bad ass and deserves casting rights.
Warspear Steg has lost a lot of punch. Still viable, but unlikely to give you to KD you want and will get with the EotG.
