What I want to do is create a Tau Gunline army. Lots of S5 shots at things.
I'm making a base army list to create a shopping list later.

The things that must stay true are:
Fire Warrior Gunlines
Ethereal Fireteam

My main question is wargear loadouts etc and how to improve them.

My current shopping list is:
1x Commander Shadowsun
3x Tau Battleforce
2x Tau Skyray Kit

I already have an ethereal.

Unless the meta of 40k is shifting away from transport heavy, you're thinking like a 4e player. And this won't work too well as Tau Gun-line is pretty easily taken apart by most other armies in 5e.

However, I'll still offer tweaks will help make it as strong as possible. So, along those lines:
a. just 3 units of FWs is a weak gunline. A 4th would help.
b. why have so many fish if your boyz are going to be on the ground? I know the d'fish sprues will come in the BattleF boxes, but that doesn't mean you have to use 'em.

Try to see if GW has the Railgun sprue still available and then you don't have to buy a SkyRay/Railhead box for a lot more money. Once upon a time, 6 years ago it was $11.

You're using up two elite slots for Stealths, when splitting deathrains up is better. Bring the Stealth teams into one 6-pak and split one deathrain off of your trio. This gives you:
1. Better anti-tank. It splits your deathrains' fire, meaning killing two tanks a turn instead of one with the 3 suits.
2. Better anti-infantry. Two trios of stealths won't have the impact of 18 collective shots, which will cause Wound Allocation to actually get around to entire 10 man squad (given some luck and ML support).

Toss the seekers for SMS, otherwise, upgrading a fish to TA and MT is a lot of points for boosting Gun Drone shooting. Yes, refocus it as anti-I. Two seekers is pricy, one shot, anti-T.

Only 4? 6 to 8 has far better impact. Better yet, go with two teams of 6. Use FW models, only equip with carbines. Cut some pulse rifle barrels down, and glue on top of the carbines and you've got models that are pretty much PFs. Way cheaper than buying PF models in blister packs.

Add the MT to Move&Shoot like a Fast Vehicle.

When prudent, use the kroot to protect your flanks from Outflanking units, especially SW scouts.

I was planning on converting the pathfinders out of firewarriors.

And I want to get some Broadsides later, but ultimately I like the Hammerhead model, and want to make a semi-viableish army that isnt just battlesuits everywhere.

Maybe start with 2 Battleforces and 2 Skyray kits for 2 deathrains, the ethereals squad, 2 lots of 4 pathfinders and 2 smaller firewarrior squads

Skyray kits because it's a Hammerhead kit + lots of extra bits for the same price. The extra Seeker Missiles etc, can't hurt can they.

C'mon, docbrown, you didn't put that together? About the SkyRay being a better buy because you get all three tank options?

And the new dex should be less than a year away ....

That's just it. Even a 3 Railhead army, with Warfish and a few suits isn't going to do well at 1850 or 2k games. XV8s are what make tau work.

Good luck on this.

Oh, and definitely, find the REM articles to have 4 to 5 of your suits fitted to change guns. I only did 6, and simply glued the next 5 as FKs and FireStorms.
