Tau dont live for too long. In the 3rd ed. Codex, one of the special characters is about 40 years old, which is considered to be 'advancing into retirement age' for a Tau warrior.
Necrons, before they were Necron robot warriors, had suffered horrifically short lives as well.
And as for the Orks, we know they age indefinitely, and just keep getting stronger as a result. But seriously, what Ork dies of old age? Ever? lol

Chaos marines don't become immortal so much as they live outside of the concept of time whenever they're in the warp.
It's very, very rare for Chaos Marines to truly "become immortal". Daemon Princes aren't common to begin with, nevermind that not all Daemon Princes are Chaos Marines.
Tau die of old age, actually, Tau have a much shorter life expectancy than humans do. Kroot do as well. Tyranids do, as they're not designed to live forever. Necrons probably did before they entered in to their living metal bodies, now... well, it's not really correct to accuse them of being alive anyway.
Orks don't die of old age, and I don't know about Eldar (if they do, it's such a venerable old age that it's practically unheard of, and they probably extend it further through psychic power). Other less heard of races likely die of old age as well, barring technology.

For IoM I would say that space marines are the closest thing to immortal they have. They can live hundreds of years. Still nothing in the grand scheme of things though.
I never gave this much thought until now... but I think the Primarchs were immortal. Being created in their fathers image so closely and what-not. Even moreso than the space marines themselves.

Wasn't Eldrad special because of his longevity? Don't some Seers crystalise inside the Craftworld and basically enter into the Craftworld or something?

Eldar do die of old age. Seers go on to crystalise inside the dome of crystal...uh...seers and have their consciousnesses absorbed by the craftworld. Originally they were reincarnated so I doubt death actually really mattered all that much to them. Eldrad Ulthuan is the oldest living Eldar by a long way (I recall the usual age being about a 1000 or so), but he himself is well on his way to crystalising and its only the safety of his race that's keeping him tied to the mortal world.

Space Marines, while potentially immortal since we don't know of any that were killed by age, still do age. They can even age to the point where they are no longer useful in any capacity.

Using some fluff from Forgeworld (and other Canon sources) someone over in ATT said that the Special Characters( and Puretide) in the Tau Codex are around 40-50. Shadowsun being about mid 40's, Farsight Late 40's, Puretide in his early 50's. I don't remember on Aun'va though.

Farsight went his own way around 750 of the currently (about to end) milleium. He would have had to serve 16 to 20 years in the Tau Military to acheive the rank he had at the time of the rebellion.
He is believed to still be alive.
Aun'va was apparently a contemporary.
Puretide taught Shadowsun who is a much more recently famous Tau.
So Farsight, Puretide and Aun'va all theoretically have lived for centuries.
The Main Rule Book points out that this is possible.

Space Marines die of old age eventually, but given that their entire life is one of battle they'll all inevitably end up dead or a Dreadnought. Same applies to CSM and Orks.

Eldar can die of old age and they are placed in the Infinity Circuit of thier Craftworld to avoid being taken by Slannesh.
Dark Eldar die of old age and to my knowledge have no plan after it.
Orks i imagine have to be able to die of old age but it would be centuries like most Xenos, and i imagine the official answer would come to "Orks love battle so much this would kill them well before age."
Tau are about 10-30 years shorter than an average human.
Kroot are approximately the same short life span... but I imagine faster as they speak of it only taking 1-3 generations for them to completely adapt to new enviroments.
Nids are organic mutating monsters which as others have stated more than likely are not designed to "Age". I imagine due to the constant evolution of their genetics they keep aging at bay through mutation and manipluation of anatomy. Similar to orks though these creatures probably kill themselves before age could factor in
Chaos can be immortal depending on the god they follow bird boy more than any of them it would seem.
Demons = no immortal
Space marines and bionic humans effectively immortal able to age to the point of mummification much like the Emperor.

There are currently some inconsistencies about Farsight and Shadowsun fluff, we will have to see. But 40 years seem average life expectancy for Tau.

Dark Eldar society is rough, so few die of old age. Normal life expectancy should be below craftworld Eldar because of soul leech. But Haemunculi and people paying them well have means to achieve immortality of a certain kind.
Tyranid bodies generally do not survive planetfall, they end in digestion pools. In one occasion, the "mind" of the Swarm Lord is implemented in a new body. In old fluff, the genestealer primarch is an old fat genestealer, leading a genestealer cult far ahead of any tyranid invasion. He can die of old age.

Currently IIRC, no space marine has died of old age. The oldest living space marine is Dante who is >1100.
If you count Dreadnoughts you have Bjorn who lived during the Heresy and was the first Great Wolf, Furioso Dreadnoughts are also supposed to date from around that time as well.
Eldar live for a really long time, but do die of old age.
Tau live for around 50, but at that age they are basically vegetables. Farsight is an odd case. We arn't sure if its the actual Farsight and the power of the Dawnblade has allowed him to live for so long OR it might just be a title that the leader of the enclave takes on when the previous Farsight dies.
Orks die in battle eventually.
Nids don't fit into the scheme, same with Crons.

The Tau method of FTL means they still remain in the time stream enough to the point where they will still age appreciably. They arn't using proper warp travel, just slightly skimming the surface. This will probably cause minor distortions, but it won't account for an individual sticking around for 5-6 times his proper life span.

Tau FTL tech doesn't have the same sort of failure rate, it just takes a bit longer to reach it's destination (still, he can probably tour his holdings in less than a week if estimates for Tau FTL travel within the Empire can be a guide).
More importantly, he's been actively holding these worlds for that 250 year span. That implies a fair ammoutn of time in realspace.

An interesting BL novel I read, Infernal Atlas, has the main character posit the theory that the Eldar webway keeps the Eldar young/long lived. I havne't read the codex to know their fluff but is this mentioned?

No, they actually spend most of their time on the Craftworlds in real space. its only the Dark Eldar that live in the webway permanantly(Clowns aside)

Haven't heard of this one but a friend of mine plays eldar I'll make sure to ask though it doesn't sound right. Best case situation is maybe time just flows differently in the webway since it's a quasi-dimensional space

There is reference to yarrick being old (not extremely old) for a human at 150, so humans have a longer life span. I know commander Dante of the blood angels is at least 1000 years old, which is old for a space marine (out of a dreadnought).

He's actually thought to be dead by the vast majority of his protégés. His mortal body is gone, as referenced in the Codex, but a few of his waystones are still alive, and his youngest protégé still believes his mind and soul can survive, which is all GW need to bring him back at some point.

Average lifespan of a Tau is believed to be around ~35 or so.
Outside of Gods, Daemon princes and Necrons, I don't think anything can live forever in the 40k universe, although humans seem to lead extremely long, active lives compared to what they are today.
