Are there any GW illustrations that show the inner-workings of a Tau Battlesuit, such as what the pilot compartment looks like? What the suit's skeleton looks like under the armor, etc?

nope not really, even forgeworld IA books have not done that yet, maybe the new codex will have some fun stuff like that.

I think the Firewarrior Novel gives a description, and it's nothing like either of those two pictures.

I don't know about the workings, but from BL books the pilot's are described as being in a foetal position in a compartment in the chest as shown above.
