I was thinking since most IG Regiments are based on IRL Soldiers (i.e: Catachans are Vietnam Rambo Dudes), We need the following:

Space Vikings:
Since they were sea-faring people, they could drift in space and ransack places like human orks.

Space Samurai
Two Words: Power Katanas

Space Knights
Like Rough Riders, only more snobby and armoured.

Space Vikings: Space Wolves dude. They're nordic as all Frak.

Space Knights: Black Templars. Name/Idea behind them/Eternal Crusade, etc.

Space Samurai: Tau. Sure they're not swordsmen, but they're the scifi version. Focusing on finesse, precision, and honor, they hold their opponent with respect and fight for the Greater Good.

You can definitely do a viking themed Guard army. Just mix in Chaos Marauder bits really liberally and run them as powerblobs, or go heavy on penal legion if you don't care about being competitive.

Samurai could be done with Eldar of either flavor. They both feature limited use of the samurai-style back banners, and there are some Eastern influences on their designs. Not over the top or anything, but it's there.

For knights you could again do IG and have them heavy on rough riders. Alternately, you could make up a tank-heavy army, and do the tanks up with lots of heraldry to appear knightly.
