I recently took my first baby steps into the world of wargaming when I purchased Assault on Black Reach and the 40K Paint Set (five Space Marines + paint). I don't plan on painting my marines as Ultramarines, but I noticed that the ones in the Paint Set have the Ultramarine "upside-down omega" symbol as part of the plastic.
Is this symbol strictly limited to the Ultramarines, or is it possible for my made up chapter to use it?

It's the UM's heraldry, so using it on another chapter might make people ask 'why are your Ultramarines green (or whatever)? ' but as far as i'm concerned, it's your models and you can do as you like with them
One of my Ork Battlewagons has an UM symbol on it (on a piece of looted armour plating), but that doesn't mean it belongs to Guilliman
as by Deffskull Warboss, whose ride it is, would put it : 'E can 'ave it back when e's killed me, iv e can take it off me 'imself  '

I think you mean it's molded into the parts? If so scraping it off with a sharp hobby knife will take care of that. Are you making your own chapter or playing one of the other codex chapters? I ask because the Black Reach marines are also molded with tactical squad markings that won't make sense unless you're chapter uses them. For example Blood Angels, Space Wolves, won't and I don't think Black Templars do either

Yep, they are molded into the parts. I'm creating my own chapter, I basically just want to do my own color scheme. Removing the symbols is an option of course, just wondering if it's necessary

Well when you get a box of space marines you'll find the quality of the minis a lot higher than the ones out of black reach and they'll have plain shoulder pads.
