Looking for some opinions. I got myself a Valkyrie, and I love the damn thing, but the pilots don't match the rest of my army. ( DKOK)
I was thinking about closing off the cockpit and making it like an unmanned drone, sort of like this:

But using an obvious sensor array like this:

My question is, is that overkill just to not have cadian pilots?

The pilots aren't Cadians actually, even if they look relatively similar.
They're Imperial Navy. Valkyries are operated by the Imperial Navy, and attached to regiments for operations. So there's actually a good reason for them not to match the rest of your army.
If you wanted to replace anything to make it clear that it's a DKOK vehicle, I'd say it would best to be the door gunners.

Another simple option would be to just tint the "glass" black. Can't see inside the cockpit, so the little men in there must match yours, right?

It's certainly possible for Krieg to have Kriegian, (ites?), people native to Krieg in the Navy. However since AI is banned in the Imperium, if you wanted to go for an unmanned carrier, it would probably be better to keep a part of the cockpit in tact and put a servitor in there and then add some the sensor arrays. A sort of half manned carrier... It would be perfectly acceptable to have someone from Krieg become a servitor to the Mechanicus and then be part of the Navy and need these autosenses to complete his duty.. and it would be a freakin awesome conversion because you could continue the skull motif that runs throughout the Death Korps.

Put a DKoK or Pig Iron head on them?
Why you would want a gasmask in a pressurised cockpit? I don't know, maybe its a comfort thing..?
Alternatively paint them p so they are definitely navy.

Have you thought about painting the cockpit to look reflective?
The Dkok fight on planets with nuclear wars right?
In theory all aircraft would need these to prevent the pilots going blind in the event of a nuclear, or similar explosion

Just tint the cockpit windows. Use a gradient to simulate reflectiveness with whatever colour you choose. I'm currently doing a red gradient on my Valkyrie cockpit to match the visors on my troopers.

That last one would be pretty cool...but how much converting would that take with the Dkok soldiers?
I don't think ANYONE would like to know the costs if you messed it up...
