How many Living Saints are there? I don't think their is currently an answer but so far I know of 2 (saint Celestine and another one in the guard books).
Saints do play large roles in battle, just look at Saint Celestine who is able to defeat a daemon prince in the fluff. I heard the other saint was able to defeat a baneblade.

She was wearing power armor, but without a helmet. A shot to the head would have killed her for sure. The rest of the body, I don't think so. I'm not sure if she had a ranged-weapon, but she was wearing Artificer Adepta Sororitas Power Armor, with what might have been a Master-crafted Power Sword. In battle she's accompanied by several heavy weapon servo skulls, and apparently has an aquila aura behind her, though I'm not sure if that was her power or a hologram. Personally, IMO, it was her power, as she had an empathic ability to sense people's emotions and selves, as well as limited precognitive abilities. And I do believe that she IS the reincarnated Saint Sabbat, as even the Champion of Chaos leading the invasion confirmed it as true from the Warp and not just Imperial psykers but also that of the enemy were being blinded by the amount of power surging through the Warp - most likely the Emperor manipulating the Warp to protect her soul from dissolving back into the Immaterium before she could fully reincarnate and re-infusing it with power.

They are. The Emperor manifests small fractions of His power through them, but enough to overturn the plans of Mankind's enemies and set the hearts and minds of many into action. Even Astartes, for all our disregard for the Imperial Church, have nothing but respect for the Saints' abilities. The first incarnation of Saint Sabbat was brought to her grave by an Honor Guard of no less than four Astartes from the White Scars Chapter, which goes to show how Astartes hold in high regard someone who has proven themselves to be truly favored by the Emperor, unlike the priests of the Ecclesiarchy, who probably attained their position by less than noble means.

Most priests of the Ecclesiarchy likely are noble enough, of course scum exists as well just like IRL. I had a lengthy discussion about that with Melissia and the other person with great knowledge about the Sisters of Battle.
Also I didn't know the Asartes disregarded the Imperial Church. Ehm it's not that I don't believe you, but can you show me the source of that?

It all depends who you are deciding to use as a source.
In terms of the Codices, the ambiguity seems to be maintained in terms of both Saints and Acts of Faith (although its been explicitly said on numerous occasions that AoF's are not Psyker/Warp related).
In terms of the FFG Roleplaying material - AoF's and Saints are connected directly back to the God-Emperor.
Edit - a Caveat must be made.
Within the fictional world, the Thorian faction of the Inquisition accepts the existence of Saints per the manner Tadashi has rendered it.
It should also be noted that St. Sabbat is Dan Abnett's Ersatz Joan of Arc - who by all indications seems to have been reincarnated at the behest of the God-Emperor.

Ahh, that explains it a bit. One of the coolest bits about Saints and SoB is you never know. You know it isn't warp energy. You know the Saints aren't Daemons. You know the SoB aren't psykers. From there, you are left to guess.

You could interpret some of the AoF's to fanatical loyalty/training on behalf of the SoB.
the Saints however - given what we've seen Celestine, Anais, and Sabbat actually do - it gets harder to pin them down and say "it must be psychological/physical conditioning."
They may simply be like the Astropaths and share some undefined relationship with the God-Emperor.

Isn't the emperor the only non-evil thing in the warp? If so it'd follow logically that the saints had some of his power since they're clearly not evil.

well, being tied to the Emperor doesn't necessarily imply Psyker/Warp powers.
The mystery with LS and the SOBs isn't so much a matter of affiliation - its more about "how do they do the things that they do?"
Even the FFG RPG doesn't give a definitive answer - they simply say they are tied to the Emperor....somehow.

I have seen a few theories about how they are supposed to "do the things they do."
1.) They are "Law" Daemons
Since WH40K is indebted to Michael Moorcock's Law vs. Chaos theme, some believe that the LS are simply the other side of the coin.
2.) the AoF are similar to Ork's WAAAAGGH!
The Orks, for whatever mysterious reason, do not participate in the Warp proper but through their Gestalt are able to influence reality. This is more than simply having a Weirdboy explode with psyker power.
When a massive number of Orks are around - painting things red does in fact make things go faster!
Its the "Consensual reality" paradigm - something which may power the AoF for SOBs.

Since our understading of the warp is quite small, I always though mthe orks waaaaagh was a kind of warp power that they managed to use without knowing about it. as for the AoF, I think we can agree that the Emperor has powers in the warp close (if not greater) than the Chaos gods (after all, the only way they fought him was trough corrupting his armies and despite emboldeing horus with their powers, they still partially lost), so he can/could imprint saints with his powers like chaos gods "give" some of their power to some humans trhough their servants (deamons). Again I might be extremely wrong as my understanding of other factions than the IGs and the orks is quite limited.

They retconned it in the 3rd edition rulebook by saying the Sensei were unwitting pawns of Tzeentch and they were eliminated by an inquisitor.

That was an in-universe source. As such, it wasn't actually a retcon. The Inquistor may have been mistaken and simply assumed that they were pawns of Tzeentch. He might not have managed to take all of them down. They still existed, and may or may not have actually be the children of the Emperor.
