So im wondering. Does a dreadnaughts weapons fused to him or can they change?
And does the dreadnought choose what weapons he uses?

Weapon loadouts would be mission based and/or preferred for the occupant. There is no hard and fast "rule" to determine it.

Yes, the dreadnoughts can be given a wide variety of weapons, although as chromedog says, they are still people and have their own preferences about what to use.

Battle of the Fang he used a plasma cannon to great extent. Also usually up close.
