Coming from 40k, my brother and I play using True Line Of Sight.
Is there any situation in which it wouldn't work in Infinity ?
Any reasons why we should'nt play this way ?

Well, it really should be TLOS as written. The only weak points of this imo is in wilderness terrain like woods, bushes, trees, etc, which might be better defined as a Low Visibility Zone in the rules (though trees should still be solid cover I guess).
To reduce arguments, it helps to have a laser pointer handy to check if you can draw a clear shot on an enemy.

Yes. Things like the sapper models or some of the crouched models would screw things up. There are times when you have to treat these models as being stood up 32mm tall like the rest of their friends.
The other obvious case is prone models, where the figure on the base doesn't count at all for line of sight.

Good catch on the sappers and crouched models, our local Ariadna players haven't fielded the entrenched figures yet. For those in a crouch, I'd sort of adjusted for those, as I usually give them some sort of scenic base to make their height closer to the level of a standing figure.

But isn't a crouched figure both an advantage and a disadvantage? It's easier to get total cover, but it's harder to draw LOS to enemies.

Yes exactly.. Infinity is better than most games in terms of being able to say "this is what would happen in real life*", but in terms of the dynamic nature of some of the sculpts (and the fact that we are still playing a wargame, and there are limits) some abstraction is necessary.
* If a thermoptic-camouflaged ninja dived in to attack a giant, sentient cockroach alien with an explosive sword

Sappers in foxholes count as being prone anyway, which I only realised recently.
For other crouching models you're supposed to use a standing equivalent model.

For crouching models you could also get creative with the base, like phelanw0lf's avatar. That Djanbazan sniper is fine if put on a base that's slightly taller than normal.
