For me its soundtracks. I'm a sucker for soundtracks. Or if its a franchise I really dig, like CoD or Halo I'll go for the collector's/limited/prestige/legendary editions.

Really depends on the game and what I see in it. Soundtracks not so much, as I usually prefer MP3. Artbooks are one possible temptation, though. Or maps. Fancy in-game goodies, too, if they appeal to me. I also appreciate small tokens of the game's setting - I still carry that "Emperor Uriel Septim Commemorative Coin" in my wallet just because it looks so damn cool.

I like physical toys over virtual stuff for Collector editions. I like to be able to have people over and they see the <insert physical thing from Collectors edition> on the entertainment center. I normally only buy them if they are priced at less than 100 and it's a game series I just absolutely love.

Nothing really. Can't justify spending more for a game unless it gives me something in game, and even then, I'd rather just wait for a sale.

IN game items that are really cool, useful or just interesting. I'll happily look over other bits and bobs, agree that Soundtracks can be a big boon.
However in general, in game stuff or I'm not really interested.

Only Limited Edition I have gone for Halo 4 Limited Edition. Because it comes with Halo 4: Forward unto Dawn + 90 minutes extra footage. Extra maps, armour and loads of other cool stuff.

Extra levels and items and stuff. I got the pre order for Darksiders 2 from Game for my birthday, it supposedly comes with extra missions and weapons.

The only 'special' editions I go for are 'Game of the Year' editions which include all the expansion packs at a low low price, or 'White Box'.
No matter the plastic gimic offered I have no intention of buying in for an early special release game.

Physical swag. The poker chips, cards, and graphic novel that came with Fallout: New Vegas were awesome. The making of DVD was nice too. Duke Nukem Forever, as much of a disaster as that game was, came with a cool little bust of Duke Nukem that sits by my computer at work.

I buy limited editions for 2 reasons (if I buy them at all). Firstly to support the developers if I think that they deserve the support. Secondly to gain access to betas and the like if I am sufficently interested in the game. I couldn't care less about the filler that limited editions usually contain.

The prefect example of someone missing the point.
Do not underestimate the Squats. They survived for millenia cut off from the Imperium and assailed on all sides. Their determination and resilience is an example to us all.
-Leman Russ, Meditations on Imperial Command book XVI (AKA the RT era White Dwarf Commpendium).
Its just a shame that they couldn't fight off Andy Chambers.
